Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Has a lot of fruit and sweetness of a quad, but it’s blonde and easier drinking. Pours light yellow with good head. Bright sweet, fruit, think apple or peach, a good bit of sugar, and a lot of yeast before a dry finish. way to easy to drink for the abv. Good stuff.

Bottle from Dranken Pauwels. Pours a rich golden clear amber, with a large white bubbly foam head, which dissipates to thin. Some floaty bits. Nose is exquisite. A grainy, sweet, citrousy tripel, with sour vinous notes, sherberty sugar, fruit syrupy, and then lots of dried apricot, dried plum, dried mango, white grape, spicy. Taste is sweet, pungent alcohol, lots dried apricot, grainy barley, vinous, light citrous bitter, and then on the finish some nice fruity sherberty candy sugar.

UPDATED: JUN 4, 2014 2013 bottle. Hazy dark orange color, small foam head. Aromas of blue cheese, yeast, nutmeg, canned apricots, sun dried tomatoes (the dried kind, not the kind preserved in olive oil), hint of laurel. Blended to perfection. Winter stuff. Quite a boozy smell I might add. Taste is absolutely jam-packed with herbs and spices, nothing I have ever tasted before. Nutmeg, freshly ground peppers, laurel. If this does not accompany a hearty winter meal like meat stew or rabbit, nothing does. Amazing. Develops beautifully, all the tastes fade away nicely, a slightly boozy kick follows (but it is accompanied by a nice taste of orange zest) and it ends in a very modest stickiness. Would rate it even higher if the carbonation was better; it lacks somewhat in this respect.

Totally delicious stuff; very sweet, belgian yeast. Prominent carbonation and head, and some alcohol notes in the nose. Booze notes as well, but in a good heartwarming way. A sipper for sure, and a lovely beer.

When I drank this Christmas beer last November I new it was something special. It is possesses the distinct Oerbier flavor typical to the De Dolle brewery however this one possesses that perfect combination. It tastes like an aged beer right out of the bottle of the same year. Drinks like a fine wine. Amber color that starts with a grape/wine flavor then ends with a slightly sour finish. SO Good!

@ Vino Bellissimo / Lima OH --- Cloudy medium amber with a lot of sediment specks; heavy head cover, sheet of lace. Taste is malt with dark dried fruit and yeasty dark biscuit. It moves without incident through the palate to a lightly hopped finish. A solid, albeit somewhat heavy, brew that is best enjoyed on a cool evening.

Sweet, with some slight lemony citrus flavor, pepper, burnt sugar, and some slight clove-like spiciness. Sweet, malty, and complex, with a strange dryness.
