Salmoniform (648) - Sweet Home, Oregon, USA - AUG 31, 2014
Poured from bottle to glass. Reddish hue with pinkish white fizzy head that dissipated. Aroma is lactic, oak, straw, wine. Mouthfeel is fantastic with a medium light body and zesty carbonation. Taste is dry sweetness initially with a great sourness that extends through the finish. Overall this is a really nice, wine-like brew...really nice!

Bottle thanks to Chow. Pours a cloudy ruby brown with a small beige head that lasts. The aroma is strong grape, oak, funk. Thin mouthfeel with a nice tart grape, light oak, funk, and dry finish. Very nice.

Bottle at Ryan’s for Vinny’s departure tasting. Poured a deep brownish red body with thick off white lacing and some decent head. Aroma is funk, barnyard funk, funky bretty lemon and some fruit. Mouthfeel is perfect tart / funk profile with notes of oak, fruit, light wine, brett, funky lemon and barn. Really nice funky wild ale.

Bottle: Thanks, Nolan. Opaque, murky copper pour with an off-white head that fizzles away quickly into nothing. Aroma with notes of sour apple, grape skin, vinous oak, & a mild acidic quality contained in the background. Sour, fruity, hints of vinegar, & just a bit of tannin from the wood. Taste has a lovely sourness without being too aggressive. Mildly acidic, cherry skin, red grape, & mild lemon with hints of lacto in there. Understated vinous oak & red wine character that grows with time. Effervescent mouth feel. Lingering sour cherry & grape finishing with a moderately acidic bite going down. De Garde does it again!

Bottle shared by Puddintane in our room after RBWG Grand Tasting. Pours a hazy rose amber color with a medium sized white head. The aroma and flavor have big tart/sour fruit, cherry, grapes, vinegar, oak, acidic, prickly feel, my first De Garde and it was good.

Dark amber-red body with a medium sized off-white head and spotty lacing. Dark berries, vinous pinot noir notes, oak, must, earth, fairly complex brett being shown off here. Medium bodied with assertive carbonation, moderate acidity and a nice earthy finish.

Bottle at Ryans tasting. Poured brown-red with medium head. Lacing was light but noticeable. Notes are raspberry, dark grapes, horseblanket, earth and other brett tones. Lots of rock salt funk. This thing is tasting perfect right now if any of you ratebeer brahs are holding her down In the cellar. Really tasty stuff.

750ml bottle opens with a small gush and pours cloudy rose red with a finger of head. Nose is strong acidic sour, cherry, berry, fruit, musty funk, some acetic notes are prevelant at first but gradually become more subdued. Taste is crisp bright acidic sour berry, vinous red grape, musty wood funk. Finish is dry barn funk, berry, grape, wine. Pretty nice but the sourness level was a bit harsh and there was an acetic presence.

Bottle shared thanks to JBPortland ! Pours a rusty amber color with a finger or two of eggshell foam. Lots of vinous fruit, tight acidity that off the bat was acetic and burned the throat but with a few minutes time stared to get juicy and complex. Glad I kept giving this another shot as the harsh acidic base faded a juicy pinot grape backdrop opened with layers of complex brett, wet wood and some earthy musty funk rounded out the palate nicely.

Des petits fruits des champs pris dans une tempête acétique et acide, très agressif mais pas dénué de charme. Je cherche encore le fût de Pinot à travers la catastrophe.
