Taras Boulba is the perfect session beer — loaded with complex yeast flavors, hopped to perfection, and as drinkable as any beer you’ve ever tried. At 4.5% alcohol, it’s built for drinkability — we suggest buying it by the case.

You’re no doubt wondering where the name comes from and what the hell the foreign text says. It’s all been explained to us by the brewers, but we’re still not entirely clear about it. What we can understand is that a young Flemish man has gone and married a French-speaking Wallonian girl, and his father, Taras Boulba, is very angry. (Smeirlap means ‘fool’ in a bizarre local dialect, which combines Flemish and French, somehow.)

This is all a bastardization of the original story by Gogol, whose protagonist was Ukrainian (Zaporozhian Cossack, specifically), and a Protestant. His son marries a Polish girl, a Catholic, during the religious war between the two countries in the 1600s, and the Ukrainian father simply kills his son to eliminate the shame.

The beer is hazy yellow light. The foam is white with large bubbles. The foam will slowly disappear, leaving great trails. Smells of hops, citrus, a little yeast and flowers. Are some grass and pine. The smell is a bit anonymous and had been expected more. The flavors of the hops and hops. Then comes the lemon and pineapple, a little grass, grapefruit, spices and a little orange zest. Small yeast tones and fresh bitterness. A little bitterness in the finish. Light to medium body, medium bitterness bitterness, medium carbonation. A little dry and bitter in the end. Refreshing with fruity notes.

Another wonderfully layered de la Senne beer: nose: at first hints of green apple, then dextrose, then this hybrid between fresh hotel towel and citrus morphing into earthier tones with some dusty aspects to them; taste: stopping short before turning into burnt rubber, there is subtle citrus/a subtle citric acidity, an almond touch, earth, hints of tropical fruit on a more soft than watery back-palate, like if brewed with very soft water, before the herbal bitterness kicks in, coating the mouth for a while, but without being astringent.

UPDATED: MAY 2, 2016 Pours murky golden with medium, quickly diminishing white top. Aroma is hoppy and a little bit acrid, just like in lager beers. Nothing special in the aroma. Taste is very carbonated, gives you a feeling of sour at the beginning, but the taste evolves to a very hoppy and dry finish. Very pleasant.

Very pale golden, no real head but some ring fed lacing. Nose is corny, grassy and figgy clove as it warmed. Initial taste is blustering gooseberry, light stale dough and a big perfumey floral. Carbonation is sleek and mouthfeel crisp and cooling. Finishes fairly light tartness, nice diluted yeasty gooseberry linger.
