COMMERCIAL DESCRIPTION
Cuvee Jeune Homme is an oak-aged bitter beer. Originally it had a slight citrus-bitterness due to its 4 hops and the subsequent dry hopping. It is acidified while it ripens for 4 months in oak wine casks. The daring bitter-sour combination is moderated by this ripening process and as a consequence it is a very pleasant drinking beer.
Ingredients: water, barley malt, sugar, hops, yeast. Re-fermented in bottle.

Bottled. Full 33cl sample. The aroma has cider, strawberry, funk, oak, citrus, some lactics. Wonderful. Bit hazy, orange coloured beer with a thin, off-white head. The taste is light bitter, has funk, cookies, white wine, citric sourness and some vinegar which evolves more to creamy lactics in the finish. Carbonation is above average. Mouthfeel is full in the finish when the lactics kick in. Pretty awesome stuff.

Bottle. Golden fuzzy pour. Aroma of tart, horseblanket and grain. Fresh sour taste of horseblanket, brett funk barnyard, oak, bitter hops, dry wood and a bitter sour finisht. Very good.

Bottle at home, 19th March 16. Pours light in colour. Aroma is tart, oak, barrel, slight hops, yeast. Taste is tart, sour, barrel, wood, yeast. Very complex and enjoyable

Bottle shared. Cloudy orange with virtually no head. Aroma of tart fruits, vinegar and a lovely soft oak barrel character. Flavour is light moderate sweet and moderate sour. Medium bodied with light carbonation.

33cl bottle shared with Kermis. Very thin white head. Cloudy blond pour. Tart aftertaste but the oak aging mellows it out. Nicely done.

Bottle on the train to Cotteridge Convention II. It pours clear bright gold with a thick white head. The nose is musty, funky, white wine vinegar, farmyard, grapefruit, sour orange, vanilla custard, honey and brioche. The taste is crisp, tart, bitter, grapefruit, musty funk, sherbet, lemon rind, white currant, oak, vanilla and straw with a dry, earthy finish. Medium body and moderate, foamy carbonation. Pretty tasty stuff.

Bottle shared on the train to Cotts Convention 2016. Thanks to Paul and Lorna. Pours mostly clear yellow-gold with a bulging, frothy white head. The nose has some salty sweat, light vinegar, acetic acid. Light-medium sweet flavor, with some lemony acidity, pale wood dryness, citrus peel, a slight metallic edge, a little funk. Light bodied with lively, massaging carbonation. Dry finish, with some grassy bitterness, hay, metal, some white grape, lemon, wood. Light acetic burn in the throat. Nice one.

UPDATED: FEB 23, 2016 Bottle, 33cL. Home. A golden yellow-orange opaque beer with a medium white head ; medium retention ; good lacing. Wood, vinegar, herb, roast. Medium lasting sour, light to medium sweet, light dry bitter note ; refreshing. Medium body, light to medium texture, average carbonation, sweet sour light woody finish. Overall, a really good one ! Nice aromatic woody acid landscape, good sour sweet balance

On tap, 20cL. @Brugs Bier Festival. A pale yellow golden opaque beer with a big white foamy head ; good retention. Herbs, wood, cider, acid. Medium sour, light sweet, bitter note, dry refershing. Light body, thin texture, average to soft carbonation, sweet acid lasting finish, light woody. Overall, a good belgian wild ale ; soursweet but also light bitterness ; nice balance in this "funkiness". 7-4-7-3-14

Medium to light bodied, soft carbonation.

330 ml bottle into tulip glass, no bottle dating. Pours slightly hazy/cloudy bright golden yellow color with a 1-2 finger fairly dense and fluffy white head with great retention, that reduces to a nice cap that lingers. Nice soapy lacing clings around the glass, with a moderate amount of streaming carbonation retaining the head. Aromas of big tart lemon, lime, pear, apple, white wine, peppercorn, hay, straw, herbal, grass, leather, oak, musty funk, light white vinegar, bread, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast, wine barrel, earthy hop, and light pale malt notes; with great strength. Taste of big tart lemon, lime, pear, apple, white wine, peppercorn, hay, straw, herbal, grass, leather, oak, musty funk, light white vinegar, bread, and yeast/oak earthiness. Good amount of yeast spiciness, herbal bitterness, and tannic tartness on the finish; with lingering notes of tart lemon, lime, pear, apple, white wine, peppercorn, hay, straw, herbal, grass, leather, oak, musty funk, light white vinegar, and yeast/oak earthiness on the finish for a while. Fantastic complexity, robustness, and balance of fruity/funky/spicy yeast, wine barrel, earthy hop, and light pale malt flavors; with a great malt/tart/bitter/spiciness balance and zero cloying flavors after the finish. Good amount of dryness from tart/bitter/spicy notes as well. Medium-high carbonation and light-medium body; with a very smooth, crisp, and moderately tannic/acidic/sticky balanced mouthfeel that is great. Alcohol is very well hidden with minimal warming present after the finish. Overall this is an outstanding Belgian wild ale! All around awesome complexity, robustness, and balance of fruity/funky/spicy yeast, wine barrel, earthy hop, and light pale malt flavors; and very smooth and crisp to drink. A highly enjoyable offering.
