Cuvee Jeune Homme is an oak-aged bitter beer. Originally it had a slight citrus-bitterness due to its 4 hops and the subsequent dry hopping. It is acidified while it ripens for 4 months in oak wine casks. The daring bitter-sour combination is moderated by this ripening process and as a consequence it is a very pleasant drinking beer.
Ingredients: water, barley malt, sugar, hops, yeast. Re-fermented in bottle.

33 cl. bottle sampled. Procured from Willems. Hazy orange with white bubbles. Smells of brett, fermenting apricots, tart, touch wine vinegar, peaches, tart, touch sea salt. Tastes of brett, sour peaches and apricots, tart, green apples, brief touch of Foie Gras, faint salt in the back, touch wood, tart white wine. Touch brett body. Man t his is truly great, this one is a real secret, no one ever talks about this, if a major USA brewery were to release something like this and hype it, it would probably hit the top 50.

Thnx to 77ships Pours unclear blonde Smell is buttery, milksourness , Perfect carbo . Taste is buttery, biscuit, bread , coockiedough ( in overdrive ) sourness . Aftertaste is more coockiedough . Unexpectedly awsome !

UPDATED: JUL 13, 2014 (backlog ZBF 2013, ZO 28). On draught, courtesy of brewer. 2nd festival day, skimpier notes: impressive green apple sourness, along with its bretty peel, in the aroma returns as natural fruity, woody acidity in the taste, on a very dry palate. Slightly sulphuric notes join a maltier body as it warms, leaving a refreshing astringent finish. Very well-composed, almost time-clocked yet light nouvelle vague BE brew. Looking forward to revisit bottled soon (bottle BAB 2014). // Revisited 07/2014 during World Cup Final: truly stellar, new world sour with a very impressively balanced composition. Explosive aroma, as citric and heavy-aromatic as the best Cantillon, only infused with an almost dessert wine fruitiness: apricot, reine-claude compote. Excellently dry, astringent, with grapefruit zest bitterness. Elegant, but weaker, oaked dry finish. World class.

Joliment dorée, effervescence fine, beau col blanc qui hélas tombe rapidement. Acidité lambic d’entrée rapidement suivie par un bon malt auquel succède une légère amertume tant houblonnée qu’épicée allant vers le poivre. Très belle complexité!

Pour out of bottle, hazy orange pour with white head, aroma brought notes of funk, cheese, oak, slight spice, hints of lemon, slight acetic, some lactic notes with a touch of white fruit. Taste was a mix of funk, oak, cheese, slight dusty basement, hints of earth, touch of yeasty, bready notes, finishing fairly tart, funky.

Bottle at Capital. Light blond colour, small white bubbly head. Aroma is good, pleasantly sour, creamy, gherkins. Taste is good too, creaminess stands at the front, but is backed up by citrus, and sourness, white wine, pickles. Interesting.

Little cloudy beige beer, small irregular off-white head, unstable, pretty adhesive. Aroma: very fruity, pineapple, passion fruit, bit piny, tart apples. MF: soft carbon, medium body. Taste: fruity start, lots of citrus, some cheese, overripe pineapple, bitter grapefruit. Aftertaste: quite sour, cheesy, lychees, little bitter. The barrel has clearly taken off some of the bitter edges. The sourness really works well on this one.

From tap. Pours hazy yellow with a small white head. Aroma is fruity, brett and light barnyard. Fruity, citrusy and orange fruity. Light barnyard andgrapefruity. Citrusy and barnyard to bretty dry finish.

330 ml bottle bought at BeYummi’s kiosk during Lan Kwai Fong Beer & Music Fest 2015 in Central.

Looks: Translucent golden amber honey colour with a thin layer of yeast sediments; Half-finger head and soapy white foam which fades in 40 seconds; Excellent sticky lacing with active carbonation.

Aroma: Strong tart and sour malt, with strong yoghurt, balsamic vinegar, strong Barnyard funk, apple, fairly strong wood barrel, strong tannic and strong fresh grass.

Taste: Sour and strong malt, with strong lactic acid, strong Balsamic vinegar, grape skin, tannin, strong funk, wood barrel, strong spice, light tea biscuits, strong yeast, strong lemon, strong bitter hops and fresh grass.

Body: Light body. Close to watery palate.

Mouth Feel: Very savoury full maltyness in a watery body. Loads of exciting Barnyard funkyness, very Brett-like, much more so you can ask for in an Orval. Pleasant yoghurt and Balsamic, astringent grape skin, good spiciness and strong lemony hops. How about that!

Hoppiness: Strong fresh grass in nose. Strong spice, strong lemon, and fresh grass in taste. Bitterness is pretty strong for a very lasting mid-to-high astringent, bitter and sour finish.

After Taste: Quite dry. Nicely tart and savoury bitter to mouth.

Comments: The last Sour Ale I had, Petrus Aged Pale, was simply too thin and watery to impress. Now this one is way better - full maltyness, nice strong tartness, excellent funkyness for that fresh fruity spicy aroma and taste, not to mention nice strong hoppiness. Man this is lively and exciting to drink. A great find for chilling out!

Pours clear pale golden with a large, creamy, white head. Aroma is sweet, malty, citrus, apples, light funk and oak. Medium carbonation, nice dry and kinda creamy mouthfeel. Flavour is mild and elegant. Tart, apples, citrus, freshness, mild grainy wheat. Very nice.
