COMMERCIAL DESCRIPTION
Boiled for 20 hours to create an umami flavour. Umami is the fifth basic taste next to sweet, sour, salty and bitter. By doing so we have now a beer that’s very thick and oily with loads of roasted malts.

Bottle. A quite agressive imperial stout (dark chocolate, licorice etc.) with lots of smoked, sausage kind of notes. The smokeiness is too heavy in my opinion and hides the other qualities of the beer.

Another imperial from this brewery, this one intending to have an umami taste (which is not that rare in imperials to begin with, but anyway). Thin, creamy, beige head, jet black colour with somewhat reddish hue. Complex, powerful aroma of coffee, roasted nuts, chocolate, peat, soy sauce, bark, liquorice. Earthy and chocolatey flavour, soy sauce, indeed umami, even a slight saltiness, smoky, thick and oily mouthfeel, dark fruits, strong roasted bitterness in the finish with remarkably well hidden alcohol. This is exceptionally well made even for Molen’s high standards.

On draft at In de Wildeman. Opaque black, thick brown head. Aroma has a very strong malty backbone, coffee, chocolate, hint of blackcurrant. Very complex flavor, nutty, honey, hops, fruit, this is seriously complex. Extremely longlasting finish. For an Imperial Stout not very bitter, instead it’s rather at the sweet side, which is unconventional but works out very very well. May be the best Imperial Stout i know, absolutely outstanding.

Black with dark brown ring of head. Aroma of ash, smoke, bitter chocolate and beef jerky. Flavor has some light smoke, charcoal, chocolate, campfire, tar. Very nice!

On tap @ De Wildeman. Black color with dense brown head. Strong cognac aroma, with some chocolate, roast/coffee, wood (oak), vanilla, alcohol. Taste is somewhat sweet & alcoholic, cognac. Finishes with a good combination of bitter, roast, ash/peat & wood. A bit too cognac-y for me, but still a good big beer of course.
