Boiled for 20 hours to create an umami flavour. Umami is the fifth basic taste next to sweet, sour, salty and bitter. By doing so we have now a beer that’s very thick and oily with loads of roasted malts.

Bottle, 180 ml. Pitch black, small dense head, oily, sticky texture. Aroma of leather, smoked sausage, coffee, dark malts. Taste is great with a subtle smokiness, bitter coffee, dried fruit. A great tasting beer.

29/06/2011 Brasserie 4:20 (tap). Bevuta al De Molen beer festival. Nera, densa, impenetrabile, con schiuma color cappuccino, liquida e poco persistente. L’aroma è di una intensità davvero fuori dal comune, con note di malti tostati, caffettose, di cioccolato, vaniglia, e alcol bene in evidenza. In bocca è potentissima, caffè, cenere, vaniglia, alcol, note legnose, devastante. Corpo pieno, carbonazione corretta. Imperial Stout sorprendente, di una intensità straordinaria, terribilmente strong.

From tap. Pours dark brown with a lasting chocolate brown and dense creamy head. Aroma is dark chocolate and roasted malty. Smooth fruity, roasted and dark malty. Distinct chocolate and dry tarish wooden. Lasting tarish and dark chocolate.

Draught at Københavns Ølfestival 2010. Pitch black coloured with a small brown head. Sweet and roasted aroma of dark chocolate, coffee and dried fruits. Sweet and roasted flavour of dried fruits, liquorice and coffee with notes of hops. Roasted finish.

UPDATED: MAY 21, 2010 Draft @ De Molen. 100% solid black pour, huge, extremely dense creamy dark brown head. Beautiful and impressive. Aroma is butter, liquorice, salty/silty, oyster/soy sauce, band aid and ve-tsin. So this is umami? Flavour is bitter and salty/silty of oyster/soy, salt liquorice, also hops, coffee, peat, spelt. Extremely creamy and full palate, clinging on for ever. Incomparable.

Small bottle from Ølbutikken, Copenhagen. The pour is as black as it gets with a thick very brown head that tends to fade but gets more and more creamy to the point when it settles an inch high. The nose is roasted with notes of burned malts, hazel nuts and a potpouri of bitter aromas. There are some notes of lacorice and leather and a hint of vanilla and wood. The mouthfeel is huge with a creamy palate. The taste starts of with quite some bitterness that tends to change caracter as the taste developes on its journey theough your mouth and down your throat. A mild bourning feeling on the lipps from the alcohol. There are some roasted coffee, english lacorice and some burned pieces of wood and finally a touch of alcohol. Its a good imperial stout with a great masculin attitude.

Bottle. Its pitch black with a creamy tan head. The aroma is roasted malt, coffee and loads of sweet caramel. The flavour is very roasted and quite dry. Smoke, chocolate and roasted coffee. Creamy texture. Very nice!

A Sim rate (tap at Copenhagen Beer Festival): Sharp, whisky aroma but with a creamy edge. Sweet brown sugar & coffee. Appearance is pitch black with a brown head. Burnt toast & roast coffee beans in the amazing flavour. It’s creamy coffee... not with skimmed milk as I make it these days, but made with half-and-half, how I no longer dare. So thick that it sticks to your palate. So, so good!

Sampled @ Copenhagen Beer Festival 2010. Deep dark, almost black body with a small brown head. Aroma of coffee, mocha and dark malt with a moderate hint of alcohol. Flavor is sweet malt, some roast, chocolate, dry fruit, bitterhops, wood and warming alcohol. So unbelievable balanced and nice.
