Aroma was spicy with clove and yeast strains and biscuits. A little bit of tartness in the flavor but was well balanced by clove and citrus flavors with spices and earthy tones. Finished dry with a tiny bit of alcohol. Insanely drinkable for 9%. I think the bottle conditioning and wild yeast fermentation really played nicely with the flavors of this brew. santos999 (318), Philadelphia, Pennsylvania, USA Nov 18, 2008 Clear gold body with a rich frothy white head. The aroma is very spicy and bretty. Lots of cat piss, herbs, caramel, lemon, honey and orange. The taste is very funky without being sour at all. Barnyard and spicy brett notes collide with loads of hops and a long, dry, grainy finish. This is a hell of a brew that’s not for the weak. A truly great example of the wonders of brett. Nice fruits (white raisins, apples).
Very well balanced with the sour and brett just balancing each other out. Sweet mouthfeel.

Taste, same as aroma, get a lot of this vegetable tones, possibly some smokiness. I bought 3 different bottles of the De Proef Primitive because the concept of a changing beer intrigues me. I’ll try to rate the 3 that I bought.
Pig Nun
25.4oz bottle, served in a wide mouthed chalice. Cork says FP060(4?) and popped out with only a small pop. Orange colored and hazy with a smallish head and a few floaties. Aroma is barnyardy with subtle sour cherries and light brown sugar. The taste is earthy, metallic, and very wild. There is an odd flavor (band aids?) that I find off-putting. There is a modest amount of tartness. The beer is being served fairly cool, maybe it gets better as it warms? Generous, white head with some sediment in the pour. Aroma of barnyard funk, sour apples. grain, and belgian malts. Flavor is mainly belgian malts and spices with a light sour citrus/apple tone. I was like woo this is going to be a signature ale type beaste, but i was wrong. Thereas quite a bit of raw grain and brewing cereal, mixed with barnyard and dung. Theres quite a bit of brett but its like"hello, im here, look at me!" but hasnt quite understood that this party is infact for smack heads only.
