Pours an ultra cloudy mustard yellow with a frothy, sudsy head that retains well and laces. The aroma at first was raspberry tartness and a bit of clove and corriander. As it warmed, the aroma was like wet hay, which to me was deliciously filthy. This beer’s got some seriously funky hops. The flavour was tart, bittersweet, and drying in the finish with bitter hops. Definitely smells different that it tastes. Barnyard, grape, yeast, sweet citrus and a peppery finish. Long palate duration. This stuff rocks. There is a sweet smell of bitterhops,minor malt,rasberry flavors, and hints of clove. As you drink it there is strong hints of clove and bitter tart flavors. Hazy orange with a big off white head that descends rockily. Very interesting nose - barnyard scents, a bit sour, green apple, yeasty, bretty, lots going on here. Body is on the thin side of medium. Flavor is somewhat less interesting than the nose promised - Mildly dry, light sweet apple, yeasty, lightly sour, some white pepper notes. A bit of herbal hop bite in the end. Aroma is sweet, spicy, with some vanilla. Somewhat green smelling. Mouthfeel is light and thinnish. Flavor has a bit of caramel, grape, with a bit of an overbearing alcoholic burn. A little harsh. Vaguely sweet, vaguely yeasty with a small dose of the kind of funk that reminds me of spaghetti + sauce. Vague Rodenbach reference in there somewhere. Touch of honey and flowers. Murky golden pour with strong visible carbonation and a big, fluffy, rocky off-white head which creeps up the side of the glass. Dry, slightly vinous taste, great creamy yeastiness with just a touch of grit. Fullish medium body, smooth enough with a little heft from the alcohol, finishing yeasty and spicy with a splash of nutmeg and that delectable hop funk. Dry, yeasty aftertaste. Some Saison notes but sans the sweetness. Definitely feels "wild" - nature’s nuances all over this. Bretty notes push this over the top; on a different day, this could easily score 4+. Nose is earthy balsamic, some herb I can’t place, leather, grapes, sweet fruit, smarties, orval. Flavor is lightly sour but very funky horseblanked. Quite dry for a second then fruit, malt, alcohol. I just love De Proef products, and these Flemish wild ales are tops in my opinion. I’m not quite sure I can distinguish the variations between the different versions of the beer - since I don’t have them often enough - but I love the way they balance the earthy spice of a good saison with the funk of a fine sour. This bottle’s got about a year on it, and I definitely notice a mellowing of the sours - giving the beer a rounded, almost melon-like quality - and an accentuation of the saison spice.
