The aroma has what one would expect from a beer called wild ale. There is a definite wild yeast element along with bread dough, bananas, and herbs. The appearance is hazy gold with a three finger head. The flavor is lacking the acidic sour taste that I have come to expect from a wild smelling beer. IT tastes very much like a sour dough bread with herbs. There is a strong dough taste here as well as mint. The palate is thick. Pours a clear golden with a two finger white head with pretty decent retention. Aroma of sour cherries, oak, spices, some funk, lemons, and very light powdered sugar. Flavor is not as oaky sour as the aroma was, and there is some caramel and a pretty decent alcohol kick--those are the first glaring inconsistencies with the aroma. There is still some funk, oak, spices, one dry finish with some warming alcohol in the back of the throat. High carbonation, medium body. Poured a amber color with a large creamy white head that was lasting with excellent lacing. Heavy spicy citrus aroma. Medium body with a smooth texture and soft carbonation. Very nice opening releasing some nice spices into the air. Pours nicely with a thick head and a tan golden color. Taste is very nice and has a little buddly texture that adds to the enjoyment. Aroma of barnyard and funk is dominating and enjoyable but maybe a bit strange. Taste is way too strong on the barnyard with what I can only describe as cat litter (not that I have ever tasted it but you get the idea). I usually am a big fan of sour, tart and funky beer but this goes to a level that I am either not ready for or maybe the brewer screw-up something. Aroma is a bit of ripe, sour fruit, lemon, some grassy notes, and a funky yeast-like note. Flavor is quite delicate for the style, unique as well, some biscuity notes and the slight tartiness followed by a brief mild bitterness that comes as the palate feels like it’s almost being coated with a thin wax. It finishes a bit warm from the alcohol as well.
