Aroma holds bannna, cream and a tart mash of fruits. Yellow with a creamy, diminishing white head. Funky chinese baby corn flavor in the fore. Medium bitterness and sharp carbonation. Pours a two finger, thick white head that barely fades leaving gobs of lace. Cloudy amber color. Medium carbonation and medium bodied. Lemony nose. Pours a copper body and a tall and rocky white cap of head. WOW... The aroma offers a terrific blend of sweet bready malts, acidic wild yeasts, and earthy bittering hops. The flavor brings feral suggestions of beet-sugars, caramel, a biscuity- tannic- doughy tartness, oak, and off-centered thoughts hinting towards apples, pears, and plums. Oddly, there is the crisp sweetness of red apple as well as a tart dry suggestion of wild green apple. The palate offers a wonderful binding of chewy grains rustic yeast… & It all plays out like a well refined champion! - I TOTALLY dig it!!! Well-hazed golden with a fizz-away head. Sharp yeast aromas are cheesish with stinky feet and lemon over peanut brittle. A fluffy mouth quickly disperses yeasty tartness, but only for an instant as sharp astringence pulls it back away just as fast. Grapeskin finish with sharp cheddar and pepper in the aftertaste. Yeast fans will be intrigued, from those who like a basic Belgian Golden thru those who crave the profile of a Flemish Brown.

Jine (889), Nutley, New Jersey, USA Mar 13, 2006 I had the Pig Nun. I rolled the bottle around in my hand because the yeast inside was plentiful and powerful. Then set it down on the desk to grab my glass and the cork blew out of the bottle. HIERONYMOUS! I love wild yeasts. This is more Flemish Sour than Belgian Strong as others have noted. I very much like this.
