Fluffy carbonation propulses a pine-y lotion along with diverse fruity esters. Plantanes emerge to take a look around, for the pleasure of the nostrils.
The Festivities: Brettanomyces here is milder than Mo Betta Bretta, Sanctification and Orval, yet enunciates its herbal wildness with diligence. Tree bark surrounds the round malt body. A haystack is also perceived through the soft, cushion-y effervescence. Obviously not a 100% brett beer, but I could not be complaining, this is very well done.
Transcendence: You can’t go wrong with a trip to a forest in the country.

I’m thinking it should be sour, but is more on the sweet side. Kind of like a wit or wheat with some funkiness. Unique to me. Very enjoyable. Aromas are sweetish apricots with some pungent horse blanket. I think the only bretta in here is bruxelensis because there really isn’t much in the way of tartness. The flavors are very lite and fruity with some unpasteurized cheese flavors and a lushness due to the high CO2. The body is lite. Thie finish is clean and short. Very nice beer. mdi (573), Nebraska, USA Jun 11, 2005 75cl bottle, no date found...pours a really pretty golden-bronze color...somewhat loose, but generous head leaving lace...corked. sweet woody cork aroma, buried under that is some barnyard smell like horseblankets in the sun and wet hay. well carbonated, and nice medium body...finishes w/ sweetness mingled with more barnyard and cork. Pretty decent...like a sweet triple with wild yeast in it...but not hoppy or funky enough for me to think its a stand out...just a good, enjoyably beer. I know I’ve had the bottle for at least 1 year, I don’t know where or when I got it...wish I knew how old it was, maybe it was more upfront when it was younger?? Smells a bit of cat pea at first, but I don’t mind it...aromatic, stinky beer! Wild yeast is the dominant flavor giver...many will be repulsed(like Laura), but I find it intriguing. Hops & especially bitterness make an impact...malt is subtle. Drank some with grilled King Crab legs...it comletely obliterated their taste from my mouth...it was a fun juxtapostion...bittersweet wildness dominates the finish. As it warms and flatens it becomes more friendly. Certainly complex, let’s see how it ages. 11026 (1799), Alabama, USA Jun 8, 2005 Bottle. Clear, golden incolor on the first pour wiht a large white head formed from varying sized bubbles. Slightly barny aroma, a bit horsey and for some reason smelling a bit cherry-like. Very biting at first taste, quite tart and bitter. Lighter side of medium bodied and well carbonated. A touch drying. Alcohol comes through in the middle along with some malt balance and a touch of hop wraps up nicely at the finish. Interesting blend of Belgian Strong and a spontaneous fermented beer. Tasted like a few beers thrown together. Nice white head and aromas of sweet and both sour fruits. Tasted a bit earthy, like dirt, sour pears, oranges, grapes and cherries. Like a sour fruit cocktail. There is a bit of malt so it’s not all sour.
