The nose is sourness with tart apple notes. First taste is the sour and light funk, but immediately has a big sweet taste under it to the point that sweet figs and fruit dominate. Second taste the fruit flavors aren’t so sweet and tend to be just a more ripe fruit flavor. There is a sweet caramel flavor that returns and runs just under the fruit flavors. With each taste the flavors shift and trade places, but remain sour, apple, pear, dates and figs and carmel. Mouth feel is smoother than the more astringent sours because of the underlying sweetness, but it does finish dry enough to make this a truly good drinking experience.
