Very bitter aroma - slightly yeasty. Taste matches, but when we added the yeast after a few sips without, the yeastiness is too overpowering, and makes it a bit mushroomy, also quite bitter and caustic on the tongue. So IMHO, don’t add the yeast, and you’ll get a crisper classic de Ranke bitter taste.
