Commercial Description:
A fantastic Christmas beer, but one that defies the universal custom of a stronger, spicier beer for the holiday season. At 7% alcohol by volume, this one is relatively lighter in alcohol than the Guldenberg, and does not pack the hop punch of the XX. It combines some of the best elements of those other two beers – with a fine balance of malt and hops, complex character, a refreshing dryness, and a gorgeous cellar aroma – but is distinguished by its festive copper color. The 1999 Père Noël was a bit of a departure, with a very appealing yeasty tartness that was not readily discernible in earlier years.

Pours a cloudy dark red with thin beige head. aroma of cherries and cinnamon. Fruity taste with a nice spicy cinnamon character.

Pours dark golden with a mostly receding wispy light tan head. Aroma of intense esters: bubble gum, banana, apple, candi sugar, and chamomile. Taste is sweet, fruity and yeasty. Light herbal notes paired with banana, honey, apple, and more candi sugar. Mouthfeel is full bodied and lightly sweet with lush carbonation.

Pours a hazy copper color with a thick white head. Aroma is fruity, toffee, earthy, and slightly spicy. Flavor is earthy caramel, toffee, and a spicy bitter finish.

Poured a Lightly hazed deep gold with a small off-white head. Yeasty and fruity aroma with a light spice to it. The flavor has some sweet malt at the start but that is short lived. Dry from the middle to the end. Hop bitter finish

Bottle. Beer poured a deep golden amber, head was off white, thin and took off in a flash. Nose was a bit spicy and had hints of orange peel and clove.

330ml bottle (Gallows Bird) Very bitter aroma - slightly yeasty. Taste matches, but when we added the yeast after a few sips without, the yeastiness is too overpowering, and makes it a bit mushroomy, also quite bitter and caustic on the tongue. So IMHO, don’t add the yeast, and you’ll get a crisper classic de Ranke bitter taste.

Pine tree, strong Noble hops, orange peels, very tart and hoppy on the nose. Balanced on the palate, with a nice interplay between hop-bitterness, vanilla and tart yeastiness.

Dark amber with a few bubbles for a head. Aroma was sour, some spice, tart fruit, doughy malt. Flavor was sour/tart with some spice notes. A completely mediocre seasonal.
