COMMERCIAL DESCRIPTION
"Style" is a dirty word in Belgium and as you may have guessed can be around our brewery, as well. Saisons, traditionally, are fermented to dry tartness and liberally hopped (for a Belgian style, anyway). Witbiers are slightly sweeter, usually spiced, and always pretty light in color. Why compromise? Hoppy for a witbier, possibly? Offbeat for a saison, for sure? Our unique contribution: Triticale, a relatively modern hybrid of wheat and rye. Tradition gets the Deep Ellum treatment. Hops: Summit, Palisade, Liberty. Malts: Pilsner, Vienna, Honey. Yeast: House Belgian blend. Other: Flaked Triticale.

Poured from a 1 pint can, pours a cloudy yellow with a small white head. I smell lemon grass, wheat, yeast, and some clove. I taste all of the same with citrus and medium hops. Dry finish, excellent....

16 oz can to glass. Aroma of yeast slight funk lavender or jasmine and slight citrus. Slightly more color than piss. Taste aaah. Very refreshing beer!! Big fan. Taste was similar to aroma. This will be a go to summer beer. Did I say big fan?!! Would be 4 except color and palate were average

On tap. Banana esters dominate the nose, as expected. A bit spicy for a wit, so that's kinda nice. Kiss of hops and grain amidst the wheat. Weak body. Translucent appearance tricks my brain into thinking I'm drinking BMC. Decent, I guess?

UPDATED: AUG 8, 2013 Aroma of spice, yeast and wheat. Pours a straw with a large fluffy mostly lasting, white head and sticky lacing. The taste is citrus, coriander, with a wheat and peppery finish. Medium body and moderate carbonation. Overall, a nice refreshing wit for a hot Dallas afternoon. ---Rated via Beer Buddy for iPhone

Hazy golden with an average white head. Aroma is of grain, citrus, grass, floral, straw. Taste is of citrus, grain, floral hops.

Bottle:   Straw, clear, slight golden hue, huge rocky white head, decent lacing, lively carbonation.   Spicy nose, lemon grass, perhaps even a touch of jasmine.   Smells inviting.   A bit softer on the tongue, some straw and hay as well.   Body and mouthfeel are moderate.   Finish is slightly soapy, in that boutique candle way.   Nice nose, a little different from most, and not all that mealy for an American example.   More enjoyable than I expected.

12 oz. bottle served in a GI Chalice. Big thanks to cfh64 (Brad) for the extra. A: Cloudy yellow color with some peach hues in the body. A one finger height of white foam forms on the pour and recedes to a thin cap. S: A ton lemon grass, coriander and some cracked wheat. Definitely oaty as well with a little orange citrus zest. Mildly soapy as well. T: Coriander, some sweet wheat notes and a little flower as well. Mild citrus zest with a sweet oat finish. It has a very subtle underlying tartness to it as well. M: Light bodied with a medium high carbonation level. A little prickly with a slightly sweet finish. O: A very solid wibier overall. Easily drinkable with nice coriander flavors leading the way. Serving type: bottle

Pours a cloudy yellow with a small frothy white head. The aroma is yeast and clove. Thin mouthfeel with a citrus and wheat flavor with light dry finish. A decent Belgian ale from Deep Ellum.
