COMMERCIAL DESCRIPTION
"Style" is a dirty word in Belgium and as you may have guessed can be around our brewery, as well. Saisons, traditionally, are fermented to dry tartness and liberally hopped (for a Belgian style, anyway). Witbiers are slightly sweeter, usually spiced, and always pretty light in color. Why compromise? Hoppy for a witbier, possibly? Offbeat for a saison, for sure? Our unique contribution: Triticale, a relatively modern hybrid of wheat and rye. Tradition gets the Deep Ellum treatment. Hops: Summit, Palisade, Liberty. Malts: Pilsner, Vienna, Honey. Yeast: House Belgian blend. Other: Flaked Triticale.

Pours hazy yellow into a chalice glass. Medium size white head. Lemon aroma dominates. Slightly bitter and spritzy taste. Light in body and easy to drink. Pretty much your perfect Farmhouse Ale. Finishes slightly dry. Another winning brew for Deep Ellum.

Smells like an Asian market, meaning jasmine and spices not chicken heads. Taste is lemon, jasmine, yeast and a touch of soap.

Pours pale yellow with a large white head. Smells of sweet wheat, mild funk, and a touch of hops. Taste is peppery, funk, citrus, and wheat. Light-bodied with a smooth texture and soft mouth-carbonation, Deep Ellum Farmhouse Wit finishes light, soft, peppery, and funky.

Draft at the FW Flying Saucer. Pretty interesting overall. Yes I’m aware a saison is technically a "Belgian ale" but this seemed like you took a Saison and mixed it with a hoppier Belgian ale. Refreshing and tasty.

Sample at Flying Saucer in Austin. The beer pours a clear pale yellow color with a thin white head that burns away to a wispy film quickly. Top ring of lacing with spots underneath. Spices, fruit and yeast in the nose. Light body with a wheaty, fruity character and touches of hops and yeast. The finish is mildly spiced with a citrus aftertaste. Above average overall.

Tap at the gingerman. Clear, golden color, decent lacing white head. The taste is floral, jasmine, rose, basil, and deep. The smell is the same.

Draft at Meddlesome Moth Dallas. Pours very hazy very yellow. Nice medium white head. Nose is mild funkiness. Taste is a bit perfumy with small hints of citrus and some mild yeastiness. Body is light stickiness and finishes thin. A bit disappointing considering the solid reviews below. Too much perfume for me.

On tap at the Common Table 2nd Anniversary Party. The beer pours a hazy yellow color with a large white head. The aroma is very nice with a lot of wheat and orange citrus notes, which are complimented by some coriander and quite a bit of Belgian yeast. The flavor is more of the same, with a little bit of yeast funk, as well as some pepper, orange, coriander and wheat. There is a touch of hop bitterness in the beer which makes the beer easy to drink. Thin mouthfeel and medium carbonation. Very nice.

(Draught) clearish light gold/white color with long lasting white bubbles. Nose of funk, light cereal, oats, honey, and some spice that reminds of rye. Taste of lemon, belgian yeast, wheat, very lightly spicy. Carbonation is spot on, very effervescent and perfect for drinking in the summer. A light beer that I never get tired of, lemony palate. Delicious.
