"Style" is a dirty word in Belgium and as you may have guessed can be around our brewery, as well. Saisons, traditionally, are fermented to dry tartness and liberally hopped (for a Belgian style, anyway). Witbiers are slightly sweeter, usually spiced, and always pretty light in color. Why compromise? Hoppy for a witbier, possibly? Offbeat for a saison, for sure? Our unique contribution: Triticale, a relatively modern hybrid of wheat and rye. Tradition gets the Deep Ellum treatment. Hops: Summit, Palisade, Liberty. Malts: Pilsner, Vienna, Honey. Yeast: House Belgian blend. Other: Flaked Triticale.

Tap @ Common Table, Dallas. Deep hazy eggy yellow with a tiny white head. The aroma’s spicy, yeasty, a big eggy. There’s a slightly malevolent spiciness to this beer. The taste is coriander, clove, white pepper and eggs. Yeast. Light honey. Belgian-influenced indeed. Medium body, light lactose. Reasonably flavorful.

Poured a very pleasent cloudy yellow with a firm white head. Nose was mild and the beer was nicely dry with no sensed spices.

Fratto (2845) - Arlington, Texas, USA - JUN 1, 2012
On tap at the Fort Worth Gingerman. Very hazy, light pour with a big white head. Aroma is light, wheaty, and citrus. Taste is spicy, dry, an almost floral bitterness, and banana.

Dixonian (1562) - Plano, Texas, USA - MAY 24, 2012
On tap @ The Bottle Shop. Cloudy yellow brew with a fluffy white head. Nose of Belgian yeast, herbal hops, spices, and citrus - flavors of farmhouse, honey sweetness, and more citrus. Crazy refreshing - I’ve yet to have a DEBC brew I didn’t like.

On tap at Flying Saucer. Pours a cloudy yellow with a small frothy white head. The aroma is yeast and clove. Thin mouthfeel with a citrus and wheat flavor with light dry finish. A decent Belgian ale from Deep Ellum.

UPDATED: JUN 27, 2013 Tap at Fort Worth Flying Saucer. Taste of wheat, coriander, orange peel and spice. Poured a hazy golden color with a nice white top. Easy on the plate, easy to drink. Overall, just another solid brew from Deep Ellum.

Hazy yellow with a white head and nice lacing. Aroma of spice, banana, florals and citrus. Taste is spicy and fruity and light on the sweetness. Medim bodied and a bit dry. Nice.

On tap at Oak St. Draft House. Pours a hazy gold with a white head. Aroma is banana, clove, and some funk. Taste is banana, some citrus, and a little funky there also. Really good.

UPDATED: OCT 4, 2012 On tap at the Oak Street Draft House. Pours a cloudy yellow with a thin, soapy white head. Aroma is nice, hints of banana fruit, some citrus, hints at funk and a lot of spice. Flavor is much the same. Medium, soft mouthfeel with medium carbonation. Overall, is ok but I wouldn’t say I am a fan of this one.

Pours a rich cloudy yellow with s frothy white head that lasts. You can smell the farmhouse yeast in the aroma which is nice. Its earthy and has the scent of hay. The aroma is very strong which is also nice. The flavor starts a little sweet tasting like yeast and turns to a dry bitterness finishing with grapefruit peel.
