"Style" is a dirty word in Belgium and as you may have guessed can be around our brewery, as well. Saisons, traditionally, are fermented to dry tartness and liberally hopped (for a Belgian style, anyway). Witbiers are slightly sweeter, usually spiced, and always pretty light in color. Why compromise? Hoppy for a witbier, possibly? Offbeat for a saison, for sure? Our unique contribution: Triticale, a relatively modern hybrid of wheat and rye. Tradition gets the Deep Ellum treatment. Hops: Summit, Palisade, Liberty. Malts: Pilsner, Vienna, Honey. Yeast: House Belgian blend. Other: Flaked Triticale.

Poured from a 1 pint can, pours a cloudy yellow with a small white head. I smell lemon grass, wheat, yeast, and some clove. I taste all of the same with citrus and medium hops. Dry finish, excellent....

Pours a hazy golden color with light fizzy head. Funk, barnyard, and wheat on the nose; raw wheat and funk on the palate. Finishes with a cereal note.

Spec’s, Houston 16oz can: Pours slightly hazy really pale yellow with a large white head. Aroma is light amounts of spice and perhaps a fruity note or too. I found the taste to be, well... tasteless. I mean, there was a little bit of spiciness and perhaps some sweetness, but really I was disappointed.

Different, which gives it extra points. Floral and fruity ester aroma with a hint of yeast. It was hard to detect the saison style in this as the spices seemed to overwhelm it. Darker golden amber-like color that was off for a wit. Very large white head. Crisp and full mouthfeel but not heavy. Large blend of flavors that was a bit chaotic but definitely drinkable. Again more spices and yeast. Not much souring but with a bitter bite at the end that was a little off. Worth a try.

16 oz can courtesy of Doodler (Thanks Scott!) poured a cloudy yellow with a lasting white head. aromas of wheat, yeast, coriander and orange zest. Palate was medium bodied and smooth. Flavors of wheat, yeast, coriander and orange zest with a smooth lingering coriander finish.

UPDATED: NOV 19, 2013 Smells strongly of orange, hops and spice and taste even more strongly of orange. Very sweet taste. Pours bright golden yellow with massive white head. Very active carbonation. All sweet on the back end.

16oz can 11/6/13 (Whole Foods-Lamar)-Pours murky yellowish orange with a huge white head. Aroma of citrus, hops, and yeast. Taste of the same. This light bodied brew is not bad.

Aroma is hard to detect... I’m thinking malty rye? Pours a golden clear color. Spicy slightly sweet flavor followed immediately by a bitter aftertaste and a waxy mouthfeel. Not sure if I got a bad bottle or what but its not my cup of tea or rather beer.

Pours a soft and cloudy golden amber with a profuse crackling white head. Very nice nose, ephemeral floral notes lots of soft spice and estery notes. ACtually, spice becomes overpowering/singular.... Especially in the flavor. God, soooo spicy. Stopping consumption now

Pour started clear gold but then the haziness ended up in the glass towards the end. Didn’t look very pretty, almost nasty. Aroma was lacking with only a slight hint of spices. Tastes was of some spices with a cheap beer character to it. While still drinkable it was a big let down for the high price tag on it. For the same price I can get more BOTTLES of good beer.
