"Style" is a dirty word in Belgium and as you may have guessed can be around our brewery, as well. Saisons, traditionally, are fermented to dry tartness and liberally hopped (for a Belgian style, anyway). Witbiers are slightly sweeter, usually spiced, and always pretty light in color. Why compromise? Hoppy for a witbier, possibly? Offbeat for a saison, for sure? Our unique contribution: Triticale, a relatively modern hybrid of wheat and rye. Tradition gets the Deep Ellum treatment. Hops: Summit, Palisade, Liberty. Malts: Pilsner, Vienna, Honey. Yeast: House Belgian blend. Other: Flaked Triticale.

Pours pale yellow with a large white head. Smells of sweet wheat, mild funk, and a touch of hops. Taste is peppery, funk, citrus, and wheat. Light-bodied with a smooth texture and soft mouth-carbonation, Deep Ellum Farmhouse Wit finishes light, soft, peppery, and funky.

Pours a rich cloudy yellow with s frothy white head that lasts. You can smell the farmhouse yeast in the aroma which is nice. Its earthy and has the scent of hay. The aroma is very strong which is also nice. The flavor starts a little sweet tasting like yeast and turns to a dry bitterness finishing with grapefruit peel.

Pint can thanks to Errl poured into a tulip glass. Pours a hazy yellow with a white head of foam. Pretty nice retention and lacing. The aroma has a lot of lemon zest personality coming through. Some other esters come through like cardamom and ginger, but that lemon zest is just in charge with this beer. The taste is very dry and lemony. I want to say pine-sol, but that would make a person think itís chemically, but it isnít at all. The lemon comes through very pleasantly making the beer very refreshing.

Pour is a murky, yellowish gold...Nose is honey, belgian yeast, spice, light mint, some lemon..Taste is sweet, spice, light mine, belgian yeast, honey, citrus, bready..Palate is spice and citrus..Very refreshing beer.

On tap @ The Bottle Shop. Cloudy yellow brew with a fluffy white head. Nose of Belgian yeast, herbal hops, spices, and citrus - flavors of farmhouse, honey sweetness, and more citrus. Crazy refreshing - Iíve yet to have a DEBC brew I didnít like.

(Draught) clearish light gold/white color with long lasting white bubbles. Nose of funk, light cereal, oats, honey, and some spice that reminds of rye. Taste of lemon, belgian yeast, wheat, very lightly spicy. Carbonation is spot on, very effervescent and perfect for drinking in the summer. A light beer that I never get tired of, lemony palate. Delicious.

On tap at the Common Table 2nd Anniversary Party. The beer pours a hazy yellow color with a large white head. The aroma is very nice with a lot of wheat and orange citrus notes, which are complimented by some coriander and quite a bit of Belgian yeast. The flavor is more of the same, with a little bit of yeast funk, as well as some pepper, orange, coriander and wheat. There is a touch of hop bitterness in the beer which makes the beer easy to drink. Thin mouthfeel and medium carbonation. Very nice.
