Hop Seeker #1 is the first installment of our quarterly IPA series, a 100% wet hop ale. We used fresh cut Centennial hops in the initial boil and will use fresh cut Equinox hops in the dry hop! Equinox is a newer variety that has a pronounced aroma profile with citrus, tropical fruit, floral and herbal characteristics, including lemon, lime and papaya. By using such an unholy amount of wet hops in copious late additions, we coaxed aromas of citrus, melon and resin from the green beasties. Wet hops all the way through!

On tap at Hay Merchant. I ordered this one thinking it was an IPA, which explains my slight dismay at all the malt and toned down hops. Still, even as a strong ale, this one is bland and watery by some standards. This one doesnít do much for me. Still, at least itís brewed in Texas. Keep em coming, folks.

On tap at Hay Merchant. Pours a clear amber and ruby with medium frothy off white head leaving sticky lacing along the glass. The aroma is a bready malt and caramel. Medium mouthfeel with a sweet caramel malt and tosst with light dry finish. Easy to drink a good American strong ale from Deep Ellum.

Super aroma. Floral with citrus rind notes. Nice mouthfeel. Hops are pronounced and surprisingly flavorful grass and citrus rind with a chalky clean bitter hopped finish. Very surprising for a local. ---That dog will hunt!

Pours a dark amber color with a lacy tope colored head. Nose is caramel, raw honey, and orangey muted hops. Foamy medium weight mouthfeel. Good balance.

This beer has a bold, deep amber/brown hued color with a dense, but thin, off-white head. Its aroma is thick and bold with hops, grain, and sweetness prevailing in a concentrated way with an almost Pacific style earthiness. Itís a little herbal, and almost spicy, in the mouth Ė a characteristic that presents itself mostly in the finish, but joins with the hop presence in the flavor to make this seem a little off-centered from your every day Strong Ale or double IPA. This is a fairly resinous beer. Dense and full in the belly, thatís for sure. Overall, though, itís fairly mellow for a strong ale, well yet subtly-flavored and hides its alcohol well

Foggy amber with an off-white tint from all the hop resin. The.aroma is floral and resinous. The backbone is heavily malted. Thereís a light syrup texture to the palate. The finish is decisively bitter. Its a little spicy and has a papery bite. Probably strong but you wouldnít know it.

Smells like sweet malts, hints of caramel and marzipan and bit of rotten fruit. Tastes pretty similar but with more fruit and distinguishable foresty hoppiness.

Draught. Nose is soapy and floral with a sweet malt note. Clear light reddish brown with a thin head. Sweet with a clean hoppyness and lots of fruit notes. Easy drinking. Pine, lemon, peach. Good body. Finishes slightly astringnet.

On tap @ Jack Macís Ruddy amber brew with a bit of sticky white head and lacing. Nose of caramel, citrus, and resiny hops. Slightly bitter up front with toffee, caramel and less of a hop presence than I expected.

Deep amber pour with a cream head. Nose is fresh hops, rich caramel, sticky, and dank. Very smooth on the palate, dough, caramel, gritty hops, and a nice finish.
