COMMERCIAL DESCRIPTION
Our year round ode to the Pacific Northwest hop. At DEBC, we like hops, but we like American hops most of all. Here we use some of our absolute favorites. However, they might not be used like you may expect, by using varieties with high alpha acid contents (which means more potential for bitterness) and using them in ways to emphasize the flavor and aroma we can render a rather bitter ale with over the top tropical fruit, citrus, pine, floral, and more hop derived aroma and flavor. Style: American-style India Pale Ale Hops: Citra, Amarillo, Chinook, Palisade, and Summit Malts: Pale Ale, Vienna, Honey, and White Wheat Yeast: English Ale

On tap at Hay merchant. Pours a cloudy orange with a small frothy off white head leaving sticky lacing. The aroma is floral hop and citrus. Medium mouthfeel with sweet hop and honey with light bitter finish. Easy to drink a very good IPA from Deep Ellum.

On draught at Ginger Man Ft. Worth. Pours dark copper color with eggshell head. Aroma had citrus, resin and bready notes. Taste was malty sweet and bitter. This was a more malt-forward IPA than I prefer, but it did have a nice citrusy hop blend that made it quite balanced. Respectable beer, but not one I’d search out because the heavy malt character.

On tap, many different times, many ounces consumed. Seems to be on tap pretty much everywhere in Dallas (a good thing). Pours a hazed yellow-golden hue with a lasting white head that leaves great lace. Aromas are of citrus, pine, esters, orange, pear, really floral, mildly bready, very light caramel or honey malt character. Flavors are of canned peaches, soft yet floral stone fruit, tropical fruit, grassy and somewhat juicy hops. Light bitterness balances. Mild malt. Medium bodied and dry with good carbonation. A great TX IPA!

Sampled at Schlafly 2012 Repeal Fest. Second fave of the fest here. Pours hazy amber with a dense beige head. The aroma has smooth grapefruit, some tropical fruit and a really nice balance with toasty caramel malt. It has a medium smooth body with gentle carbonation. There is great balance for this one - very assertive piney, grapefruit and tropical hop traits that are very bold and assertive. But there is the caramel malt from the aroma that keeps everything in check. The finish is nice and resiny. Very enjoyable IPA.

Enjoyed on-tap @ the Schlafly Repeal of Prohibition Festival @ the Schlafly Bottleworks in Maplewood, MO. Tapped from the Black/Silver Tap Handle into a 16oz Schlafly Cup. Aroma- Amarillo hops and a strong, Northern IPA hits the nose. Very powerful with citrus looming in the background. Fruity and on the verge of being an Imperial IPA’s aroma. Appearance- Received with a 1 finger, frothy head that has average retention. The body is a reddish copper with semi-haziness. Leaves suds behind. Flavor- Hop overload from the beginning to end. Almost breaking into a 2x IPA, this ones strength might scare people away from this style. Medium-High Bitterness at the finish. Amarillo hops seem to be present with a kick of Northern hops. Mouthfeel- Medium Bodied, Medium Carbonation, Smooth, a quite dry for the style. Leaves a heaping amount of hops on the palate for minutes after enjoying. Overall Impression- A well brewed IPA from Deep Ellum. Very bitter and hops were very extreme in this one. Recommend this one if your into the Northern hopped IPA’s with a big bitter background. Almost a Double IPA, but not quite.

Draft sample at Schlafly Repeal of Prohibition Festival 2012. Pours a clear golden-amber color with a small white head. Aroma of big, citrusy hops- so fresh- with caramel malts and pineapple. The flavor brings even more citrusy hops, tropical fruits, caramel malts, pine resin, and a little bit of spice. Light-medium bodied, with a citrusy mouthfeel and medium carbonation. Really nice and fresh.
