750 ml bottle into chalice, no bottle dating. Pours hazy golden amber color with a 1-2 finger dense white head with good retention, that reduces to a thin cap that lingers. Spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation. Aromas of big peach, pineapple, pear, apple, lemon, apricot, light banana, clove, pepper, wheat, honey, candi sugar, herbal, floral, light bubblegum, and yeast earthiness. Fantastic aromas with great complexity and balance of fruity/spicy yeast ester and malt notes; with great strength. Taste of big lemon, peach, pear, apple, apricot, pineapple, light banana, wheat, honey, clove, pepper, herbal, floral, candi sugar, light bubblegum, and yeast earthiness. Lingering notes of light fruits, lemon, peach, pineapple, wheat, honey, candi sugar, clove, herbal, floral, light bubblegum, and yeast earthiness on the finish for a good bit. Fantastic complexity and balance of fruity/spicy yeast esters and malt flavors; with a near perfect malt/yeast balance and zero cloying flavors after the finish. Medium-high carbonation and medium bodied; with a smooth, crisp, and lightly slick mouthfeel that is great. Alcohol is very well hidden with hardly any warming present after the finish. Overall this is an incredible tripel style! All around fantastic complexity and balance of fruity/spicy yeast and malt flavors; and very smooth and crisp to sip on for the high ABV. A top notch offering for the style, especially for being an American representation.

Bottle pour from Best Cellars in Westwood, NJ, Thanksgiving 2013. Still not a huge fan of the Belgian Tripel style but this offering has a tamer note that I appreciate. Mild cheese funk and farm animals on the nose, followed by tasty yeast and fermented fruits on the palate. A very drinkable Tripel for the derelicts and pure of heart alike.

Bottle at the source courtesy of staff, thanks Brian and lady from Capetown. Cloudy yellow color, thick white head with goodcretention and solid lacing. Aroma of funky farmhouses, straw, fruit. Taste is sweet, strong and funky. Very tasty.

Bottle. Pours lightly hazy yellow with a medium, frothy white head, long retention with excellent lacing. Aroma is biscuit and honey malt, spicy hops, Belgian yeast esters and spices. Flavor is malt forward with Belgian yeast esters and spices, light hops and bitterness with a dry finish. Medium body and carbonation.

Bottle. Pours a very hazy orange-gold color with a moderate white head on it. Taste is a little sweet with some hints of citrus and bubblegum in there. Taste is much sweeter than the nose would imply with a mix of fruit and bubblegum. Not a huge fan of this.

On tap from Beer Table. I got a mason jar of the stuff to drink on the train - they now allow beer drinking on the Metro North trains, so next time you are catching a train from Grand Central Station, pick up a pint for the ride from Beer Tableís little shop. This is kind of a local classic - by far Defiantís most popular brew, but Iíve only seen it in the NYC area. I have been meaning to try it for a while, and I was not let down. Excellent flavor - wheat (Iím not sure if it has any, but I thought I tasted some), a little wintergreen, lots of fresh bread flavor. Very well balanced - a first-rate tripel.

Another great beer in one of my favorite styles. Sweet, fruity aroma. Smooth, fruit taste. Strong and very drinkable.

Bottle tonight at Easter dinner @ Louieís on the Avenue, Pearl River, NY. Mom, Dad, Nana, Tommy, Diana. Dark golden pour, not really hazy or mirky, almost glassy/shiney. Half-finger head develops after the pour but recedes and vanishes extremely quickly, almost instantly. Glass was a 10ish-oz Pony-style glass. Aroma was nice fruit, almost tart, some yeast and spice. Flavor was very sweet, again falling short of tart but almost there. Some delicate yeast, grape notes, a little funkiness. Masks the 9% very well. Medium-bodied, high-medium carb. Enjoyable and Iíd say sessionable despite being so sweet.

Bottle: Poured a bright slightly hazy yellow color ale with a rather large white foamy head with good retention and minimal lacing. Aroma of fruity ester with sweet candy notes is quite nice. Taste is a good mix between some fruity ester with candy-like residual sugar with medium Belgian style malt backbone. Body is about average with medium carbonation and no apparent alcohol. More fruity then I was expecting but very well enjoyable nonetheless.
