Purchases at Cava a la Bulles in Paris. Minty herbal funk on the nose with some tart citrus aromas. It pours a hazy golden blonde with a white head that dissipates quickly. Very acetic flavor with hints of mild acetone notes layered with tart vinegar and some barnyard funk. Not bad but a little too acetic for me.

Big thanks to travlr for this one! Slightly cloudy golden pour. Nose is marked with BIG sour notes of lactic, bretty barnyard, and a touch of acetic bite. Flavor brings more big sour presence, touches of cheesecloth and dry doughy yeast. Low carb, big sour. Cool to try a French sour, and very very good!

Thanks travlr! A golden body gives way to robust white froth that lasts quite well. Tons of citrus and lactic acid in the nose with excellent brett proliferation and a vibrant funk character. The flavor is abrasively sour with huge lactic acid and hints of acetic acid, with funky farm notes and sour dough in the background. The carbonation wasn’t super high on this, which made it seem even more enamel peeling. I really enjoyed it!

Bottle recommended by Simon at Cave a Bulles, shared with Terry, Urbain, Matt, Chris, craftycarl21 and oteyj at Farmer’s Cabinet. Cloudy golden amber color, small white head. Aroma of sour grapefruit, lemons, barnyard, raw sourdough bread. Taste starts softly sour citrus, then acetic acid comes in, but not overwhelming. This one exceeded all my expectations.

My Bottom Line:
Lactic acid, green wood and citrus fruit adhere to this Lambic-like structure as muddied malts get pushed away by prevalent sourness. This is funky stuff, folks!
Further Personal Perceptions:
-A ring of foam circles the murky beige amber.
-The chewy sweetness which precedes the acidic splash is quite surprising.
-If I have to compare this to a known style, I’d say a Jonge Lambic would be close.
-The low carbonation and sour lengths combine for nice drinkability.
-This is one of the most memorable products I’ve had from a relatively new French brewer. Good job!

(Bottle) Pours cloudy dark orange with brown hints. Small head. The aroma holds citrus, vinegar, acid, medicine, grainy malt, cream, mould, light fruits, soft phenols and horse blanket. The flavour is dry, near heavily acidic and tiny bitter. Citrus, funk and dry malt. The mouthfeel is tart and tight with a light carbonate. Long citric aftertaste. Medium bodied.

A Mes rate. Bottle at the Struise School thanks to a really nice French bloke who spoke no English. Golden brown with a thin off white head. Superb barrel notes. Lots of wet wood, superb lemon and citric stuff, hints of spice and a faint caramel sweetness in the background. Truckloads of lemony goodness in the finish. Gloriously dry, great length. Great stuff all round. Wish I spoke French enough to say a proper thanks to the guy.

A beautiful sunset color with a thin white head which dissipates fairly quickly but never fully.
The smell is exquisite. Old wood aromas combine with rich citrus smell in a perfect melange. I could just smell for hours.
A straight sourness like old Gueuze but the smooth way. The finish is nicely sharp and fruity. Best beer I ever had. This is spectacular.

Exceptional beer. One of the most original in France. Aged in oak barrels. Drawn every 2 years in a small quantity. Some blegian call this a french gueuze, even if, of course, it does not belong to this style. Acidity wooded, tonic attack with aromas of grapefruit and apple. Long final who perfume the entire mouth.
