With a Wit base recipe, we conducted a primary fermentation with lactobacillus in the kettle, and then fermented warm with our house Belgian strain on top of pureed apricots. We transferred to conditioning with fresh apricots and soaked dried fruit. What begins with aromas of apricots turns to a big sour mouthfeel and finishes with notes of wood from the pits.

Very tart, that is for sure. If you want a very Sour Ale, look no further than Deschutes Brewing Company.

Clear light copper color. No memorable head. Tart aroma like apple peel. Tart flavor with a paltate so try it burns. More like a tart cider than a sour.

Tap at Deschutes in Bend. Pours a full haze golden with low lacing. Nose is dairy heavy, funky, bleu cheese/footy, a bit oxidized. Taste is big salt, pickle/acetic, funky dairy, bracing stomach acid. Lactic, acetic, salty. Not so bad.
