Deschutes Brewery and Hair of the Dog Brewing join forces to weave The Dissident and The Stoic and Fred and Adam into an artistic collage of cask-aging alchemy. Damn. Beer is fun!

One hundred percent of these beers spent two years aging in a variety of oak barrels: Rye Whiskey, Cognac, Sherry, Pinot Noir, Bourbon, used American Oak, new American Oak and new Oregon Oak.

Less than 200 barrels of this intelligent blend was produced.

Bottle from Barry with some friends pours brown orange with light head and lacing. Notes are rich booze, bourbon, sherry, oak, rich wood, cognac, sweet, hops, plum, cherries, and bannana pudding. Awesome.

Bottle to snifter. Best after 4/30/13. Consumed 5/13/13. Pours deep brown-mahogany with a very fluffy, beige head. Aroma is IPA-like; spicy, fruity, apples, citrus, grass, lemon, caramel, vinous. Taste makes me smile; sour cherry, citrus, dark fruits, spicy, more cherries, vanilla, caramel, a good amount of barrel, oak, wood, earth, lots of fruit; finish is tart cherries. Beautiful dense lacing throughout. Medium-low carbonation. Chewy mouth feel. Alcohol is evident but fairly well-hidden considering the ABV. This is excellent. VERY West-Coast. Please tell me there was more of this bottled!

12oz bottle. Poured a dark amber colo with an off white head. Aromas of wood, vanilla, dark fruits, and saw dust. Tastes of dark fruits, caramel, vanilla, and toffee. Medium alcohol on the finish with a softer body.

Bottle. Incredible. Pours a hazy dark amber with very little head. Aroma is tart cherry. Woody and a little dry. Really a good beer, might grab a couple more.

Sampled from a 12 oz brown bottle this beer poured a brown color with a small foamy white head that lingered and left a decent amount of lacing. The aroma was boozy tropical fruits, pine and table sugar. The flavor was bitter, tart and sour pine, lemon, tropical fruits, bourbon, coconut, plum and oak. Medium length finish of oak, pine, tropical fruits and coconut. Moderately full bodied and almost syrupy. Nice.

12oz bottle, (drinking with Adam, Fred, and The Dissident) pours a murky slight amber brown with a small khaki head. Aroma of oak, vanilla, caramel, some sour cherry, slight rye, and whiskey’s. Full body, caramel and toffee, some mild cherry tartness, vanilla and oak. A fair about of orange sweetness from the Fred. Tartness of the cherries from the Dissident comes through nicely. I think the Adam comes through the most here with chocolate and darker malts and works the best to help blend all the different barrels. Overall very complex and enjoyable!! Glad I have a few more bottle of this one.

12oz best after 4/30/13 @ 60º into 15.25oz Spiegelau Soiree Cognac snifter; mahogany body supporting a 1" slightly desaturated light khaki tightly structured head with a few large bubbles, falling to a hardy ring, thin islands, and a few peninsulas of lace; a flood of complexities, bright funky acidic barnyard opens the show, caramel, coffee, leather, smoke, chocolate create a base for dried light and dark fruit, vinous layers, bourbon, toasted oak building through the drink, seamless characteristics mingling and evolving within a silky medium body leaving a thin stickiness and building warmth, caramelly coffee layers and sour bourbon notes linger for some time; interesting and exceptional

Pours a deep murky brown with thin khaki head that quickly dissipates and nice waves of lace. Nose of vanilla, oak, sour cherries, caramel, bourbon and sherry. Taste follows the aroma with additional notes of anise. Lightly tart, a little boozy, with a nice oaky finish.

Drinking this 8 days early like a lush. Aroma is intricate mix of tannic berries and wood. Dark liquor expresses itself too. Bourbon, cognac, red wine, sherry, and wood. Ligt tan head a top a dark red brown body. Good lacing. Dissident seems to come through most, cherry, wood, but prominent vanilla. For how complex the aroma still is, the taste has really merged. Slightly boozy. Tart and slightly sour. Certainly an interesting and above average beer but seems like too much work, too much cost. If money is no object, great beer.
