COMMERCIAL DESCRIPTION
Our Belgian-style Tripel is characterized by a complex yet mild spicy character with Trappist Yeast-generated fruity banana, pineapple and tropical fruit esters being present; however clovelike phenolic flavor (like in a Hefeweizen) is absent. This is a very pale/light-colored ale which finishes lightly sweet, has a medium body and an equalizing hop/malt balance. Belgian candi sugar is used to lighten the perception of body, although alcohol strength and flavor are quite evident in this beer. Very low hop flavor, dense head retention and slight chill or yeast haze are also typical.

(Draught) Pours a clear yellow body with a small white head. Aroma of mustiness, citrus, pineapple, candi sugar, and banana. Flavor of citrus, yeast, earth, candi sugar, and some grass.

On tap at champaign brewpub. Pours medium brown and clear. Not much lacing or head. Fairly strong alcohol note that dominates initial bite. Some vanilla malts and moderate hopping. Pretty mediocre.

Draft at Champaign Location. Pours an attractive deep gold, light haze with a billowy white head. Issues with the lines here, pedio infection? Nose is a blast of buttery diacetyl, which sucks. Once you get past the butter notes, there is a really good yeast profile, light banana and spicy clove notes, faint hopping. Pils malt is also detectable, light alcohol. On taste, again, the diacetyl is on top of a good beer. Light sweetness, dry finish and nice fruity notes with a balancing phenolic bitterness. Damn shame, really.

Tap - thick foamy head that lingers for a little bit, lots of carbonation bubbles when poured, medium amber color, Belgian yeasty flavor with some mild banana sourness

4 oz draft at Normal, IL location. Poured a light brown color, a bit dark copper in there. Aroma was citrus notes, sweet, slighty nutty malts. Flavor was sweet malts, spices (touch ginger, banana, cloves), slight, but mellow hop character. A few characteristics that reminded me of bubble gum. Overall a highly drinkable brew, especially since the alcohol is almost entirely masked at +8%.

4 oz pour on tap at the brewpub (Normal, IL). Only beer on tap I haven’t had. Pours a nice murky golden orange hue, a good healthy haze, some darkness into the body with a small loose whitish head that dies to a ring clinger. Aromas are sweeter overall, honey and citrus, some yeasty spice and bread dough, oranges, more banana, pear, apple move into a decent floral hopping, a touch dry and spicy. Initial is medium bodied, preaching some sweetness up front. Apples, bananas, and some citrusy oranges mix with honey, bread dough, and pale malts. Inviting, as it isn’t overdone. Into the middle it dries up and that spicy yeast shows some life. Belgian yeast, spice, and some dry hops, with florals throwing a touch. Finish is a touch warming, though the ABV doesn’t interfere. Dry and spicy, I don’t generally like this style but this one isn’t bad. Perhaps it’s more of a Golden Strong Belgian, staying away from that sticky sweet. Maybe a touch of bubblegum. Not too shabby for a style I generally loathe.

On tap at the brand new brewpub in Champaign, part of a large tasting flight that I wasn’t even charged for! Bright lemony yellow, no head. Aroma is sweet and spicy, phenolic undertones. Flavours of rock candy, bubblegum and clove. Quite sweet, not very complex.

On tap at the GTMW. Golden yellow with a thin off-white crown. Aroma of fruit tannins, varnish, yeast, candy sugar and mild earthy hops. Taste of spicy Belgian yeast, candy sugar, fruit and mild sourness. Ok.
