Walk through our brewery when we brew this beer, and you’d think we were a perfume manufacturer, but no need to wear what we make when you can drink it. This Belgian-style White or ’Wit’ Ale: very pale in color, spiced with coriander, chamomile, lavender and orange peel, phenolic spiciness, fruity esters & mild acidity from wit yeast. It is unfiltered and has a nearly opaque/whitish haze appearance, low Noble hop bitterness and flavor and low-medium body.

Hazy blond color. Dry, with a light bready flavor, and also a light fruity, peach touch. Ordinary bitterness. Fresh.

Cloudy pour, the color of hay. Smells like a wit. Starts off like a wit, banana and bubblegum. Some wheat. Then gets tart and funky. I can’t decide if I liked it.

On tap @ Destihl. Cloudy golden-straw pour with a white head. Bready malt base with a hint of citrus. Some lime and lemon zests, good orange, and a touch of cracker. Very light pepper and coriander spiciness. Quite floral. Good sweet bread dough flavor. Hints of pepper and coriander, lime, and lemon. Plenty of orange, too. Easy to drink.

Sampled from the tap at the brewery. Pours a clear gold with a white head that dissipates to the edges. Aroma has lots of flora with a touch of sweetness and earthy wheat. Flavor has a good amount of flora and earthy wheat with some sweetness in the finish.

On tap at Hackney’s. Looks like a typical wit. Flavor is considerably more sour and crisp than a typical wit. Considerable acidity. Interesting flavor - not your run of the mill wit, but also not that good.

Draft on tap at Beer Under Glass 2012 (Chicago, IL). Pours a rich well hazed straw yellow hue, flashes of golden glow and yellow haze. A big frothy head sits atop, cakes well and laces ok overall. Good haze and lasting rich head. Aromas are bright vibrant lemon and orange, zesty with some gentle tartness, flaked wheat and gentle cereal malts. Touches of coriander dance in as it warms, light white pepper. Initial is heavier end of light bodied offering a fluffy yet flavorful feel on the palate. Inviting with tart lemons, zest, touches of orange. Dry with gentle hops, dry cereal grains and bread, flaked wheat. Gentle citrus, mellow crisp sweetness into the middle. A touch of spice, dry bread, straw into the backend and finish. Mellow white pepper, coriander. Inviting, refreshing, yet not underbodied, with more of a slant towards lemons. Solid summer refresher. Vibrant nose and appearance, solid beer.

On tap @ the brewpub in Champaign. Cloudy lemony yellow with a thin white head that laces the glass delicately. Aroma is tart and spicy. Flavours of refreshing wheat, coriander spice, with a tart dry finish.
