COMMERCIAL DESCRIPTION
Brewed in honor of our Illinois State bird, this beer is an American-style red ale with medium caramel sweetness and medium-high body, characterized by American varietal high hop bitterness, flavor, and aroma. The style has low levels of fruity-ester flavor and aroma. Alcohol by Weight (Volume): 4.8% (6.2%) Bitterness (IBU): 36 Color SRM (EBC): 12 (24) Baldock IPA #5 ON TAP!!

On tap at the Wine Tap. Pours a cloudy amber with a thick small bead white head that lasts throughout and coats the glass. Aroma is piney hop spice. Taste is sweet caramel malt, crackers and some grapefruit and hop bitterness. Quite good; more like a hoppy pale ale, but not so much like an IPA.

Sampled from the tap at the Normal brewpub. Pours a clear reddish amber with an off white head that dissipates slowly to the edges. Aroma has a good amount of earthy grain and bread with a bit of hay and sweetness. Flavor has a good amount of bread with some straw and hay backing.

Sampled at the Normal brewpub. It poured a dark copper color with an off-white head. The aroma was of cereal with some dandelions. The taste was of more cereal and toast. It had a nice roasted finish with some peanuts and even a hint of chocolate. Not bad.

Sampled at the brewpub. Mclear amber with a smallish layer. This is spicy from the beginning with some harshness. Fruit. Softer malts.

On tap @ Destihl. Amber pour with a finger of off-white foam. Malty amber ale. Dominant toast, toffee, and caramel malt nose. Light herbal and floral hops. A touch of red fruit esters. Slightly woody. Taste is heavy on the malt sweetness. Dominated by toast and toffee. Sweet caramel, some sweet red berry, and a mild woody, herbal bitterness.

Sampled at the brewpub in Normal, IL. Came in the glass amber. Not mcc head. What was there seems off white. Medium body. Flavor is malty with some spicy hops. Light bitter nutty finish. Not my favorite style to begin with. Not much going one here.
