COMMERCIAL DESCRIPTION
Our complex, Belgian-style ‘wild beers’ are aged for several months or even years in our oak barrels. Each barrel contains a different base beer (with distinct color, flavor, body, alcohol, malt and hop character) which undergoes spontaneous and prolonged fermentation with wild critters including Brettanomyces, which is a non-spore forming genus of yeast which lives on the skins of fruit in the wild. The genus name Dekkera is used interchangeably with Brettanomyces and was discovered at the Carlsberg brewery in 1904 by N. Hjelte Claussen, who was investigating it as a cause of spoilage in English ales but which is appreciated and encouraged in certain traditional Belgian-style ales.

Deep brown pour. Wonderful nose, brett by means of dark fruits, sour cherries, etc. Strong amount of vanillians and a slight earthy/mushroom note. Turbulence brings out some almost dusty noble hops. Flavor is woody up front with some brett and bugs followed by a sweet finish. the oak dryness is well balanced by a good amount of residual sweetness. A must try.

(Draught) Pours a cloudy amber-brown body with a medium cream head. Aroma of caramel, cherry, bread, yogurt, and earth. Flavor of brett, caramel, cherry, lacto, and brown sugar.

On tap at GABF. Pours with a murky brown body and a tan head. Aromas are sour, caramel, estery, oak. Flavors are odd, sweet (too the point of cloying), caramel, acidity, raisins. Thick, acidic, light bubbles and sour. Flavors clash for me.

Poured clear reddish orange with slight white head, aroma had notes of some lactic fruit, caramel, toffee, some earthy nuttiness going, with a hint of funk in there as well. Taste was a bit of lactic funkiness leading into sweet caramel and toffee, some spice notes as well finishing fairly tart and sweet as well. Nice idea, but the combination was a bit weird.

sample at GABF on 9/20/11. dirty brown pour with small off white head. sour lactic nose. medium body with more sour lactic acid. some sweetness peeks through. sweet finish with dark fruits and lactic acid.

Draft at GABF. Pours a slightly murky brown copper with minimal head. Nose is tart, lactic yogurt notes with a strong caramel presence remaining. On tasting, sweet and sour, the caramel notes remain from the base and are distracting overall. Firm sourness and some lingering bitterness but the caramel is just too much.

Growler thanks to Sarah, shared with others! Pours a near clear amber brown with a near white head that dissipated to the edges. Aroma has a sour red fruit note with a backing grains and caramel as well as a hint of pine hops. Flavor began with sour red fruits with a bit of growing sweet grains and caramel and a bit of a hop bite coming out in the finish. Different for sure.

Destihl dekkera sour barleywine. Growler from Adam... Pours a dark caramel amber brown with a medium light beige head... Aroma of sour earthiness and muted cherries and other fruit.... Flavors are earthy sour with a semi-bitter finish . Muddled flavors. Not too solid. a bit of cherry but nothing too distinct. 6/4/7/3/14

Growler shared at Kristina’s pig roast behind West Lakeview Liquors by some nice people. Pours a cloudy orange-brown color with a tan head. Notes of tart cherries, oak, vanilla, caramel malts, raspberries, bourbon, and a bit of hops. Warming alcohol. Medium-bodied, with a sweet boozy mouthfeel and moderate carbonation. I like the Dutch art movement, I like the White Stripes album, and I like the beer. I’ll have to pay this place a visit sometime.

growler shared by kan at the WLV liquors pig roast. thanks kan! yogurt sourness wtih a doughy creamy sour cherry presence. tastes dirty earthy sour. booze well hiddien. nice soured earthy fruit notes that seemed a bit weird at times.

growler, thanks kan for sharing. this guy poured murky amber with small off white head. a sour cherry and mildly funky aroma with toffee maltiness. flavor is sort of an odd mess of soured cherry vinegar and sweet brown sugar and vanilla. not much really standing out here as the beer sorta falls off pretty fast but the tart character makes this seem really clean and easy drinking to be enjoyable.
