Draft on tap at the Champaign Beer Dinner (Champaign, IL). Pours a darker golden striking hazy hue, a small whitish head dies to a ring and laces tiny ring. Aromas are sour lemons and lactic acid, dancing coriander, blood orange, and wet oak. Gentle white pepper Flaked wheat and bread mesh with oranges, lemons, and some touches of lactic yogurt. Gentle yet firm. Initial is gentle, offering dances of lactic acidity up front, lemons and oranges, dances of spice, some earth, and coriander. Touches of flaked wheat, into the back picking up a stronger touch of sour citrus, touches of yogurt, lactic acid. Finish is dancing touches of oak, white peppe picks up the pace, gentle and spicy as the sourness isn’t as sustained as many of the other sours. Finish is some crisp bread and flaked wheat, dry and sour. Very nice sour here from Destihl.

On tap at the Normal, IL brewpub. Pours a clear pale golden colored body with a finger-width, frothy, white head that dissipates slowly and leaves a nice lacing throughout. Aroma is very sour and tart lemons with a touch of cherry. Acidic with oak and a light wheat malt behind the sourness. Flavor is solid. Tart cherries and acidic lemons up front with some other sour fruit esters. Oaky in the middle with some lactic acid before a really pleasant, slightly bready, lightly sweetened wheat malt comes in to balance. Malt guides this into the finish where it is clean, smooth, and sour before drying off completely and leaving a medium length aftertaste. Light body with an active carbonation. Overall, a solid sour. Very tart and acidic, but easy drinking with a nice light malt sweetness. I liked this one.

Draft at the Normal location. Pours a mostly clear, slightly hazed pale gold with a dissipating white head. The nose is really quite tart and fruity with cherries and citrus, fading into an aged Balsamic note. As it warms, turns more vinegary in the nose. On tasting, the balance starts towards soft lactic acid, mild sweetness then a slap of sharp vinegar. There is a lingering sweetness and a bready note. Light fruity esters but the acetic note is a bit much, taking away from the lovely lacto. Okay.
