COMMERCIAL DESCRIPTION
Our complex, Belgian-style ‘wild beers’ are aged for several months or even years in our oak barrels. Each barrel contains a different base beer (with distinct color, flavor, body, alcohol, malt and hop character) which undergoes spontaneous and prolonged fermentation with wild critters including Brettanomyces, which is a non-spore forming genus of yeast which lives on the skins of fruit in the wild. The genus name Dekkera is used interchangeably with Brettanomyces and was discovered at the Carlsberg brewery in 1904 by N. Hjelte Claussen, who was investigating it as a cause of spoilage in English ales but which is appreciated and encouraged in certain traditional Belgian-style ales.

BARREL #2: Double Pale Ale aged in a 4th generation old Wild Turkey bourbon barrel for 10 months in the presence of brettanomyces, lactobacillus, and pediococcus. Silver Medal winner in Wild Ale Style at the 2009 Festival of Wood and Barrel Aged Beers, Chicago.

Amber pour, white head. Nice and fruity with bourbon and oak. Some vinegary sourness but not overpowering at all. Very nice.

Draft @ FoBAB 2009, Chicago, IL. Pours a hazy dark amber color with a small off-white head. Has a fruity sour funky woody aroma. Fruity sour funky brett flavor with hints of oak and weak hoppy hints. Has a fruity sour funky brett finish.

Cornfield (5512) - Oak Forest, Illinois, USA - NOV 21, 2009
FoBAB 2009. This poured a cloudy dark ambe body with a smallish off-white head. The aroma had a tart funkiness to it, and touches of wood. The flavor had a more defineable fruitiness - orchard fruit, banana - and had a definite Brett funk with a lemony tartness. Nice brew.

FOBAB - 2009- pours a cloudy brown with a small cream colored head. Notes of cherries, earth, barnyard funk, mold, wood. Bourbon is an afterthought. Well balanced interesting beer. tastes good too.

FoBAB. Pour is rich brown with a smallish tan head. Aroma is lactic acid, sourness, brett, heavy wood, and distant hop on full malt backbone. Flavor is a strange mix of sourness, hop, and wood. Its a bit of a strange combination, but it is really well balanced and really quite tasty. The wood really stands out in the finish.

Sampled at FoBAB 2009. Pours a nice murky amber, small offwhite head that laces light. Light sweetness, pear and apple, light tartness, brett, light malty sweetness. Initial is sweet, banana and apple, light tartness, brett and lacto, full on the palate but not heavy bodied. No real bourbon presence, light on the back of the palate but still flavorful leaving a decent flavor melange, light bitterness.

FoBAB 2009: Deep amber hue with a frothy small head. The aroma is a touch grainy and soapy at first but fades leaving some nice sour fruit and oak vapours up front. I found a interesting minty and peppery note with just a hint of light funk. The taste has a nice twangy fruit and acidic tone up front with a oaky and bourbon tone in the background. Again I discovered a minty and spicy tone about the finish. Wonderfully complex and subdued. The mouth feel is lively and refreshing with a dry finish. Surprisingly good, Mikey Likey!

Great Taste, 2009. Destihl was the surprise of the day, putting on a nice show. This was excellent, and demonstrates that a skilled brewer can come out of a destination like Normal, IL. Notes of cherry, grass, orange and lemon finish with vanilla and oak. I liked the playoff here of sour notes with the hops and the bourbon, playing on the sweet-savory theme. Nicely done.
