COMMERCIAL DESCRIPTION
Our complex, Belgian-style ‘wild beers’ are aged for several months or even years in our oak barrels. Each barrel contains a different base beer (with distinct color, flavor, body, alcohol, malt and hop character) which undergoes spontaneous and prolonged fermentation with wild critters including Brettanomyces, which is a non-spore forming genus of yeast which lives on the skins of fruit in the wild. The genus name Dekkera is used interchangeably with Brettanomyces and was discovered at the Carlsberg brewery in 1904 by N. Hjelte Claussen, who was investigating it as a cause of spoilage in English ales but which is appreciated and encouraged in certain traditional Belgian-style ales.

Enjoyed at GTMW 2012. Pours a black/brown with a cream head. Smells of soured fruit and tickles the nose. Tastes slightly metallic but mostly in the aftertaste.

8/11/12. GTMW - labeled as "Barrel 11." Deep amber/red pour with a small tan head. Nice tart aroma with wood, sweet sugars, tart cherries, and other fruitiness. Tart and woody flavor with cherries and sweetness, but very nice, balanced, and tasty. I dig it.

FoBAB 11’. Pours a reddish purple brown. Nose & taste are of white & red grapes and vinegar. Nice beer.

FoBAB 9. Translucent red-brown, thinnest white large-bubbled ring. Light chocolate, plum, and a bit acetic and vinegary. Flavor is ultra sweet, plum and grape juice, chewy body sticks in the sweet, empty finish, light acetic creeping in. Jesus Destihl, thanks for the heartburn. No oud bruin balance here, malt absent, richness absent.

On tap at GABF. Pours with a clear, deep brown body and a tan head. Aromas of red wine, vinous, malty, caramel, acetic, strawberry and a bit of bready malt. Flavors are acetic, brown sugar, red wine and mild esters. Pretty vinous. Light bubbles, dry and oaky.

On tap at Fobab 9. Pours dark reddish brown with off-white head. Aromas of vinegar, lactic acid, and some spices. Flavors of ripe fruits, vinegar, some earthy spices, and some acidic sourness. Not overly sour, but solid none the less.

22oz bottle filled for competition. 2010 world beer cup. Somehow wasn’t able to sample this at fobab and decided to prop this open with a local... Pours a deeper scotch ale darker mahogany, just slightly transparent in nature and topped with a frothy barely light off-head... Aroma of lightly smoked, touch of bandaid, with a moderate degree of smoked cherry malt. Sour but not acidic but notes of an earthy wild character to go alongside the fruit characteristics. Wow the smoke character hasn’t at all subsided after all this time... Base flavor profile result in smoked cherriness which takes precedence. Semi-sweet but still contains a decent sourness all around. Lighter bodied almost to the point of medium. I wouldn’t say the smoke is distractig bu warmng up definitely helps in that regard. Enjoyed. Glad I have a few more.

Sampled on tap at FoBAB 2011 (Chicago, IL). Pours a nice brownish pour, a touch of copper glow on the edges, with a loose bubbled head. Aromas are sour cherries, red wine, oak, and vinegar. Touches of toast dance into the fold. More cherry, red wine, light vinegar. Initial is medium bodied offering that telltale feel. Sour cherries, red wine, vinegar and lactic acid dance with just a touch of toast. Oak and lactic presence takes over as more sour cherry comes to pass. Middle keeps on with a touch of acidity. Finish leaves a lingering red wine and cherry feel, some oak, and good sourness into the finish. Very nice. Truly representative of the style.

draft... a solid oud bruin but shocked at it placing at fobab... dark brown, nice shiny color... its a fine oud bruin, plain, boring, a bit of a chalk finish, no vinegar wish it was more tart or had a cherry sweetness or any fruit really
