COMMERCIAL DESCRIPTION
Our complex, Belgian-style ‘wild beers’ are aged for several months or even years in our oak barrels. Each barrel contains a different base beer (with distinct color, flavor, body, alcohol, malt and hop character) which undergoes spontaneous and prolonged fermentation with wild critters including Brettanomyces, which is a non-spore forming genus of yeast which lives on the skins of fruit in the wild. The genus name Dekkera is used interchangeably with Brettanomyces and was discovered at the Carlsberg brewery in 1904 by N. Hjelte Claussen, who was investigating it as a cause of spoilage in English ales but which is appreciated and encouraged in certain traditional Belgian-style ales.

Powerfully sour flanders ale, reminds me of monk’s cafe a bit with its sweetness but it isn’t as sweet as MC so it is good.

You have to like sours to like this beer. This is powerful and uncompromising, full or brettiness with a tangy sweet flavor, medium body, and enticing appearance. Tried with Nick at the brewery in Normal in 2012.

Sampled at GABF. Pours a brick red with some creamy beige head. Great nose, wood pulp, vinegar, greens, malt. Sweet malty flavor, red wine vinegar, woody. Full bodied, tart finish. Perfect level of acid.

GABF. Reddish brown. Cherries, vinegar, toothpicks, some preserved lemons, yeasty funk. Flavor is sour and very fruity, pucking with some vinegar notes. Damn, another winner!

On tap at Brasserie V - Pours deep dark ruby with a thin tan head. Nose is sweet cherries, with yogurty tartness, big black cherry. Taste is real thick, sweet, and tart. Black cherry, lots of red wine, vinegar, adn very drying finish. Thick and viscous.

Enjoyed at GTMW 2012. Pours a black/brown with a cream head. Smells of soured fruit and tickles the nose. Tastes slightly metallic but mostly in the aftertaste.

8/11/12. GTMW - labeled as "Barrel 11." Deep amber/red pour with a small tan head. Nice tart aroma with wood, sweet sugars, tart cherries, and other fruitiness. Tart and woody flavor with cherries and sweetness, but very nice, balanced, and tasty. I dig it.

FoBAB 11’. Pours a reddish purple brown. Nose & taste are of white & red grapes and vinegar. Nice beer.

FoBAB 9. Translucent red-brown, thinnest white large-bubbled ring. Light chocolate, plum, and a bit acetic and vinegary. Flavor is ultra sweet, plum and grape juice, chewy body sticks in the sweet, empty finish, light acetic creeping in. Jesus Destihl, thanks for the heartburn. No oud bruin balance here, malt absent, richness absent.
