COMMERCIAL DESCRIPTION
Our complex, Belgian-style ‘wild beers’ are aged for several months or even years in our oak barrels. Each barrel contains a different base beer (with distinct color, flavor, body, alcohol, malt and hop character) which undergoes spontaneous and prolonged fermentation with wild critters including Brettanomyces, which is a non-spore forming genus of yeast which lives on the skins of fruit in the wild. The genus name Dekkera is used interchangeably with Brettanomyces and was discovered at the Carlsberg brewery in 1904 by N. Hjelte Claussen, who was investigating it as a cause of spoilage in English ales but which is appreciated and encouraged in certain traditional Belgian-style ales.

BARREL #3: Rye Wine

Rye Wine aged 9 months in Heaven Hill bourbon barrel with brettanomyces, lactobacillus, and pediococcus.

Sampled at FoBAB 2009. Pours avery dark brown copper, small offwhite head, laces small. Aromas are lightly tart, citrus, a touch of berry, flaked wheat malt covered up by a warming bourbon. Initial is a bit malty, sour lacto and pedio, a warming bourbon, lacto comes on stronger, faint fruit, wet wood. A bit frutity, peach, light. Interesting.

Draft at DeStihl. Pours a slightly hazed red brown. Nose is distinctly a bourbon barrel with a slight tart rye note. On taste, this is really too big to sour, imo. Too much sweet grain notes. The souring bugs don’t really do much, at least not yet. Maybe with another year this could be good, but it’s missing a lot. Meh.

4/30/10. On tap at the brewpub. Lots of barrel aging coming through with a touch of spicy malt coming through as well.

Growler shared by pantanap. Growler opens with a loud pop. Pour is dark rich-looking brown with a nice fluffy tan head. Aroma is lightly tart with a roasted rye backdrop. Also notes of wood and christmas spice. Flavor is two layers: Smooth sourness rides above wood, spicy rye, and caramel. Finishes with bitterness and wood with a touch of metal. Improves with each sip.

UPDATED: MAR 27, 2010 Destihl dekkara rye wine...Pours a cloudy opaque reddish brown with  Aroma of tart sour cherry and a little bit of green chemical aroma phenols and def woody... Starts nice with a sour cherry wood component with some vinegar-feel bit gets strange with a very strange chemical sourness in the finish that put me off at first but slowly became less offensive as it wore on...

Deep brown in color with lots of haze inside the brew and topped with a creamy, off-white head. Aroma has a strong Brett and mild lacto nose with a modest fruity ester ending. Flavor starts with a very quick rye presence with some mild fruity ester notes early but both fade into a smooth sourness that carries on till the end. Sour flavor isn’t as strong as the previous sour ale, barrel no.2. Body is light to moderate in density, good carbonation and smooth texture. Overall a decent sour brew but I found the sourness a bit weak and lacked the ability to meld with the ancillary flavors residing in the brew.

FoBAB 2009. I have got to get back to Normal... a statement that could probably be taken a couple of ways, I guess. This poured a reddish brown body with a small bubbly head. The aroma was lightly boozey, spicey, and had a touch of fruity, funky tartness. The flavor had some peppery rye spiciness, a fuzzy tartness, a splash of Bourbon, some oak, and vanilla. Very nice barley/rye wine.

FoBAB 2009: Deep ruby hue with a light frothy head. The aroma has notes of red wine, rye husks, clove, lactic acid, sour plums, oak, vanilla, and earthy minerally esters. The taste starts with a nice spicy bite where the Rye shows up front and center along with a acidic fruity tone. The bourbon is light and adds to the beer, never overpowering. There is a slight funky and earthy tone on the rounded finish. The mouth feel is oily and lush but still sharp and lively too, wonderful at accenting the beers character. This is an outstanding hybrid and one of my favorites of the fest.
