Our complex, Belgian-style ‘wild beers’ are aged for several months or even years in our oak barrels. Each barrel contains a different base beer (with distinct color, flavor, body, alcohol, malt and hop character) which undergoes spontaneous and prolonged fermentation with wild critters including Brettanomyces, which is a non-spore forming genus of yeast which lives on the skins of fruit in the wild. The genus name Dekkera is used interchangeably with Brettanomyces and was discovered at the Carlsberg brewery in 1904 by N. Hjelte Claussen, who was investigating it as a cause of spoilage in English ales but which is appreciated and encouraged in certain traditional Belgian-style ales.

Tap. Pours clear golden, minimal head and lacing. Aroma is strawberry, oak, red wine, cherries. Flavor is light tart, light musty funk, berries, oak, wine. Light plus body. Nice.

On tap @ the brewery. Very lightly hazy medium gold, no head. Oak and unripened strawberries, moderate lactic sourness, rounded and smooth. Very tasty.

Hazy light amber pour with a white head. Tart nose. Very sour, acetic and lactic? No fruit to be found. Maybe a strawberry seed character?

Thanks Tom. Sour with some strawberry. Aroma has a little yeast. Berry is very light, hardly perceivable. . good sour and acidic flavors at least.

Majority of 9 oz. pour, on tap at Lone Oak in Eagan. Consumed on 1-24-16. Pours a clear, dull bronze with a small amount of nearly white head. Uninspiring appearance. Soft, floral but lightly sour smell. Delicate aroma. Slightly chemical smell but not in an offputting way. Nice but light, sour taste. Mineral and spicy. Chlorine flavor. Just a hint of fresh strawberry in the taste. Nice flavor. Lively in the palate. Refreshing. Overall, a nice beer but not as good as I expected given the ratings here.

Bouteille de 500 ml partagée lors d’une dégustation entre amis. Arôme: Odeur de fruité surette. Apparence: La couleur est orangée légèrement voilée avec une très faible densité de bulle. Saveur: Goût de fraises surettes avec une pointe de boisé. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement vineuse. Moyenne effervescence en bouche. Medium strawberry nose lemon funk oak a little poopy. Golden pour thin white head. Flavors of light strawberry funk Brett a little poopy lemon medium tart with mild sweetness. Good carbonation. Not worth $20 that's for sure.

My Bottom Line:
Pediococcus and lactobacillus take hold of this Wild Ale’s citrusy fruitiness, leading you to plenty of wilderness and sourness.

Further Personal Perceptions:
-A slice of foam sticks to the misty pinkish golden.
-The strawberries aren’t really apparent in the nose. They do should up in the flavor profile, but don’t appear very fresh.
-You can actually predict the high sourness level just by smelling this brew.
-The prickly carbonation works well with the flavor profile.
-The fruitiness is also reminiscent of white grapes.

Sampled at GABF 2015 with Andrew, Paul and Chris. Pours a deep golden body with white lacing. Mouthfeel reveals a bit of a vinegar bite followed by some fruit - sour strawberries and tart character.
