COMMERCIAL DESCRIPTION
Our complex, Belgian-style ‘wild beers’ are aged for several months or even years in our oak barrels. Each barrel contains a different base beer (with distinct color, flavor, body, alcohol, malt and hop character) which undergoes spontaneous and prolonged fermentation with wild critters including Brettanomyces, which is a non-spore forming genus of yeast which lives on the skins of fruit in the wild. The genus name Dekkera is used interchangeably with Brettanomyces and was discovered at the Carlsberg brewery in 1904 by N. Hjelte Claussen, who was investigating it as a cause of spoilage in English ales but which is appreciated and encouraged in certain traditional Belgian-style ales.

I had this at Oak Park Microbrew Review in 2014 and it was the best beer of the afternoon for sure. A lot of strawberry beers have a tendency towards this overripe/rotten fruit flavor or, if they use artificial flavors, just smelling like Jolly Ranchers. This beer, on the other hand, had great, naturual strawberry flavor and furthermore had honest to goodness malt beer character to it as well. It is subtle, slightly tart and well done from top to bottom. This is a beer that will do well as both a small sample and as numerous full servings. Definitely, this is a must try for fans of the style.

Taster at naperville ale fest, actually only beer I got a second pour of. Sour and tart and a bit sweet. Lots of strawberry flavor but not forced or overdone. The sour is quite restrained and it is very easy to drink. Awesome sour.

Taster at Upland Sourfest. In my notes as "Destihl Strawberry". Mildly hazy golden orange color. Thin off-whites head. Good dots of lace. Nice strawberry cheese cake aroma. Cake-like breadiness. Smooth, soft, crisp lighter carbonation. Light slick body. Awesome big tart sour taste. Fantastic strawberry sour. Fucking good!

Draft (@IndySourFest - Sour Strawberry Barrel #14 aging since 9/21/2012). Musty strawberry and lemon malt aroma. Hazy golden yellow with small head. Slightly sweet but mainly tart strawberry and lemon malt flavor. Light vinegar finish. Very nice.

Pour at WTF poured a clear gold with a lingering ring of white foam. Aromas of strawberry, straw and light barnyard funk. Palate was light bodied and crisp with a dry lightly tart finish. Flavors of straw, strawberry and light funk with a crisp dry lightly tart lingering strawberry finish.

On tap, pours a hazy gold with a thin head, the aroma is pretty fruity with a little bit of funk and lactic acid, the flavor has a fruity front end with a sour and funk finish, the strawberries show in the finish too, good stuff.

Tap sample @ Midwest SourWildFunkFest. Tart fruity (but not strawberry) lacto aroma, as well as a little nail polish remover - but not in a bad way. Hazy straw gold with a small white head. Earthy sweet-tart strawberry, light funky lacto flavor. Light creamy body, moderate carbonation.

Samled at the Hampton. Hazy white gold. Tart sour aroma with strawberries. Thevstrawberry comes out nicely. This really is good. The wild yeast is nice. Tasty stuff!

Pours a hazy blonde color with a small (almost non existent) head.

The aroma is earthy and funky in a barnyard/sweaty kind of way. The beer displays some nice tart fruit character and a little bit of vinegar in the nose.

The flavor is sour but also very fruity. Dry with lots of seedy fruit, lightly woody, with just the right level of sourness. Delicious.
