COMMERCIAL DESCRIPTION
Our complex, Belgian-style ‘wild beers’ are aged for several months or even years in our oak barrels. Each barrel contains a different base beer (with distinct color, flavor, body, alcohol, malt and hop character) which undergoes spontaneous and prolonged fermentation with wild critters including Brettanomyces, which is a non-spore forming genus of yeast which lives on the skins of fruit in the wild. The genus name Dekkera is used interchangeably with Brettanomyces and was discovered at the Carlsberg brewery in 1904 by N. Hjelte Claussen, who was investigating it as a cause of spoilage in English ales but which is appreciated and encouraged in certain traditional Belgian-style ales.

FoBAB 9. Hazy gold, thin white ring with star-pattern bubbles at surface. Nose is very muted, watery, light wood and melon, bit of strawberry but almost nothing. Flavor similarly muted, lightly bright with seedy fruit but very plain, low acid, very sticky, carbonation keeps it alive through the lightly refreshing melon-finish where there’s a bit of elmer’s glue and acetic acid. Totally missed the malt aspects of a blond, acidity of a sour, comes off as a train wreck.

On tap at GABF. Pours with a hazed golden hue and a white head that lasts. Aromas are fruity, estery, jammy, sour, funk, toasty, some acid, brett, floral. Flavors are slightly sweet strawberry, fruity, funk, and acidic. Lively bubbles dry. Very nice.

sample at GABF on 9/20/11. cloudy yellow pour with a small white head. light sour nose - not picking up any strawberry. medium body with lactic acid - light strawberry notes. dry lactic tart finish.

On tap at the GTMW 2011. Hazy yellow with a thin white head. Aroma is sour with oak, strawberry, mild funk and yeast. Taste is sour with oak, mild strawberry, fruit, wild yeast and a very dry finish.

A: The beer pours a pale yellow color with a finger of white head. S: Unlike some other strawberry beers, the fruit actually comes through on this one. Nicely tart with lots of berries and a hint of vinegar. There’s a light grassy funk with some lemon peel and a touch of oak. T: Quite woody with plenty of strawberry and lemon flavors. A touch of vinegar to go with the lactic acidity. Mild earthy funk, mostly grass and straw, with a light mustiness. M: Fairly light bodied with medium to high carbonation. O: Really a nice beer. I was impressed by the amount of strawberry and the tartness was excellent.

Sampled on draft at GTMW 2011. Pours a hazy lemon yellow color with a thin head. Aroma of tart citrus, strawberry and a hint of must. The taste is tart berries, citrus. Very tart. Medium bodied. Quite refreshing. Nice beer.

Draft at the Normal, IL location. Poured a clear, slight straw color, small wispy white head. Aroma is mostly sour notes, touch of fruit notes were present, mild fruit. Flavor was light sweet berry notes, with funky fruit notes. A really tart and interesting brew.

Draft sample at FOBAB 2010. Pours a somewhat cloudy gold color with a small white head. Notes of honey, sour grapes, tart strawberries, funk, wheat, and pale malts. Medium-bodied, with moderate carbonation and a sweet, sour, malty mouthfeel. The bourbon barrel notes really don’t come through much, but this is a good beer nonetheless.

tap at FOBAB. funky, sweaty basement. musty sourness. lemongrass. wheat. strawberry comes off as a lemondough with a touch of berry- maybe unripened strawberries. pretty good.

Sampled from the tap at 2010 FOBAB. Poured a slight hazy gold with a white head that dissipated to the edges. Aroma had a nice sour light strawberry note with some backing funk. Flavor began with strawberry that grew tart and was backed by some sweet grain and a bit of funk.
