COMMERCIAL DESCRIPTION
We curse daily at this beer because it takes so long to ferment, but it’s worth the wait, despite our emotional scarring. This Belgian-style Saison has golden/light copper color, light body, medium hop bitterness, flavor & aroma, medium-low malt flavor & aroma and spiciness from added coriander. Fruity esters dominate the aroma while complex alcohols, acidity, low Brettanomyces character and clove and smoke-like phenolics from Saison yeast.

Cloudy orange pour with thin/no head. Spicy yeast dominates. pepper and and banana/bubblegum esters. Subtle citrus in the nose. slightly bitter in the mouth with a touch of residual sweetness.

[Tap] Hazy dark golden pour with a large amount of head on top. Clove, citrus peel and lighter yeasty esters in the nose. Flavors are grassy, with green apple, clove and a tart fruity character coming through. Dusty malt finish seems a bit stale. Tasting notes from 9/2014.

Pour on tap at the brewery, slightly hazy yellow-orange pour with white head, aroma brought notes of biscuit, bread, some yeast into a bit of white fruit, touch of spice, grassy, earthy notes into a bit of grain. Taste was a mix of white fruit, biscuit, orange peel into a bit of pear, slight yeasty bread, hints of spice, touch of pepper, finishing fairly bitter, slightly dry.

UPDATED: DEC 12, 2014 Draft. Pours hazy orange. The aroma has orange and little else. The taste has sweet orange and is quite bland.

On tap at Bailey’s, pours a hazy copper with a small white head. Aroma brings out strong Belgian yeast, citrus zest and some funk. Flavour is very juicy and fruity, with some undesirable residual sugars, citrus and Belgian yeast. There’s also a vegetal note there that’s rather detracting. Not that good.

On tap at the Normal, IL. location, and served to a 12 oz. tulip showing a slightly hazed but still bright amber hue, with a modest, soft white head that reduced quickly to a ring & film, and left some light dots & dashes of lacing on the glass. The aroma was mega-tartness, with citrus, mid-fruit as apricot/peach, light yeastiness, and spiciness following behind. Highly effervescent, with a medium body, the flavor continued the aroma notes, adding soft malt, low hop bitterness, an underlying sweetness, a touch of creaminess to the mouthfeel, hidden alcohol, but an overly sour nature for the style that masked any inherent complexity. More in the realm of a Sour/Wild Ale imo.

Draft. Light amber body with a short, off-white head. Fruity aroma of cherry, apple along with bread, toasted grain, flowers. The flavor is moderately sweet and lightly bitter. It finishes lightly to moderately sweet and lightly to moderately bitter. Thin to medium body, watery texture, lively carbonation. Cherry tartness in the finish. Some peppery notes in the taste along with some floral hops. Too sweet for a saison.

Draught at the Normal location. Pours hazy brass color with whitish head. The aroma is strawberry, some earthy notes, black currant, apple, and a slight decaying wood note. Flavor is dry and earthy with some interesting phenolics. Some faint fruity notes are in there, too (melon, strawberry, etc.). The finish is cedar and wild honey with a woody aftertaste. Not bad.
