COMMERCIAL DESCRIPTION
This Belgian-style Saison is golden in color, light in body and medium-low in malt aroma. Fruity esters dominate the aroma, while hop character, complex alcohols, herbs, spices and even clove and smoke-like phenolics from our Saison yeast strain are evident in the overall balanced beer. Malt flavor is low but provides foundation for the overall balance. Hop bitterness is moderate, carbonation is high and the spice of coriander added to the brew is evident. A small amount of sour or acidic flavors is in balance with the other components.

Growler, thanks suzyg. To be fair, rating from a growler that leaked quite a bit in transit. Pours a caramel brown, slightly hazed with small ring of carbonation around the edge of the glass. Fruity belgian esters, cherry, lemon, slight banana...getting some boozy bubblegum under there as well. Getting some herbal and floral notes as well, but nothing readily identifiable. Touch on the flat side, but to be expected. Light fruit, lemon/cherry, phenolic, touches of cheese, also get slight bitering in the finish. Would re-rate for sure if ever given the chance.

growler; clear dark orange, thin white head; carbonation suffered a bit in transit I think; aromas of stale pepper, apple juice and dried wild flowers; sticky, stale mouthfeel; thin texture with some stale honey and candy; lingering spices mixed with a dry, woody, wild flower flavor

on tap-pours gold with an offwhite head. Aroma is sweet light/medium malt, perfumy. Taste is yeast, sweet light/medium malt, perfumy/spice hops.

Draught at the Normal location. Pours hazy brass color with whitish head. The aroma is strawberry, some earthy notes, black currant, apple, and a slight decaying wood note. Flavor is dry and earthy with some interesting phenolics. Some faint fruity notes are in there, too (melon, strawberry, etc.). The finish is cedar and wild honey with a woody aftertaste. Not bad.

Growler from Ben. THanks dude. Nose is sweet, spicy with a little dust, some peppery hops, a little corriander. Pours hazy orange brown with no head or lace. The flavor is spicy initially, pepper, corriander, sweet fruity notes, even a little salty notes perhaps. Carbonation is light, smooth, a little lingering spice. Not bad.

Draft at Destihl. Pours a hazy gold, big white head. Nose is spicy, notes of bubblegum and clove, some coriander and citrus as well. Oddly generic. On taste, full body but again, generic in it’s profile. This is a beer that would do quite well in the St. Dekkera series. It lacks some complexity right now, like it was perhaps overpitched and the yeast not stressed enough. Still, super drinkable and enjoyable, just lacking character.

Draft on tap at the brewpub (Bloomington, IL) and a sample at GTMW ’10. Pours a glowing golden hue, deeper and bright with light haze, a frothy white head stays decent sized, laces ok. Aromas are more fruity than anticipated, apple and pear mesh with grainy cereal malts, bread dough, a touch of floral hopping and light yeasty spice. Initial is similar, a medium to lighter medium body rues the day, with apple and estery fruity qualities, bready cereal grains, touch of spiciness and peppers moves in, mellow spicy coriander moves in and grows fairly strong over the palate, vanilla, honey, dry floral hopped finish with lingering sweet malts. Not a bad Belgian style beer, a touch of dust and dry finish makes it a bit farmhouse-esque, a bit sweet and fruity overall for my liking as "Saison", but a pretty good beer overall. Not bad

Cloudy orange pour with thin/no head. Spicy yeast dominates. pepper and and banana/bubblegum esters. Subtle citrus in the nose. slightly bitter in the mouth with a touch of residual sweetness.

(Draught) Pours a murky burnt orange body with a small white head. Aroma of coriander, grass, florals, and clove. Flavor of yeast, coriander, grass, clove, and some dried citrus.
