Commercial Description:
First brewed at Bosteels, transfered to the Champagne region of France were it is treated much like a champagne with the bottles inverted and the yeast expunged and bottle recorked.

From bottle at Zeno’s. Wonderful herbal nose like a Ricola cough drop. Witchhazel, coriander, heather, and ginger. Toast and biscuit, mild pilsner malt. Crystal clear golden yellow with thin white lightly lacing head. Light champagne with a bit more body. Effervescent and light. Starts and stays sweet with pilsner malt, ginger, spices, and light yeast. Tasty stuff though a bit too sweet in the finish. This is counteracted by light carbonic acidity from the heavy carbonation. Very rich and tasty but I couldn’t drink a lot of this.

Courtesy of Nate. Pours a clear effervescent apple juice color with a spritzy fizzy head. Aroma is very sweet with some ginger. Flavor has a lot of strong herbal characteristics, still with a lot of ginger. Very tight fizzy carbonation. Once the sweetness of the beer is gone, it leaves an extremely dry taste. Medium body which is lightened up by the heavy carbonation. Nice to try, but wouldn’t want too much of it.

Pours golden with a white fizzy head. It looks just lihe champagne. Aroma is fruity and yeasty.Taste is spicy, very carbonated. Hints of bannana, carmel, clove, Very intresting . I’m glad I waited until New Years Eve to try this. Happy New Year!

[bottle - corked and caged 750 ml - 2006 vintage] Golden in color with a very fizzy and lasting white head. Extremely carbonated and lasted for a long time. Aroma is very spicy and yeasty with some sugars, sweetness, caramel, and lots of spices mixed in. Flavor is very spicy as well with many different flavors going on. I detected spice, anise, yeast, caramel, apples, alcohol, and toffee to name a few. A whole lot going on in the beer but very good throughout. Finishes bubbly and warming.

Sampled from a 750 ml brown bottle this beer poured a dark amber color with a large soapy white head that faded quickly. Very effervescent. The aroma was strong sweet apple, caramel, anise and cola. The flavor was drier that I expected given the nose but was intense, complex and robust with notes of tart and tangy malts, pear, anise, cola, yeastiness, and pepper. The finish was short and spicy. Very interesting but sadly far to expensive for me to revisit.

Crushed with Jakebra. Bourbony and warming. Skeptical since this bitch cost so damn much, but I must say I was very pleased with the result. Fantastic like a friend of Mannys.

A champagne beer, and nearly as strong at 11.5%. Straw-colored, rapidly disappearing head, so appears flat in the glass. Tastes like champagne, with a touch of hoppy bitterness. Gimmicky - especially the Dom Perignot bottle. Not worth the pricetag (we paid $50).

Had a bottle two years ago so bear with me in trying to remember it. Appears clear yellow with a white head. Definitely acidic carbonation and tartness in there. Apple cider too. Interesting beer.
