Arôme est léger frais rappelant la citronnelle fraiche avec pas mal d’herbes qui pour moi sonnent comme la Provence.
En bouche, bière très légère malgré ces 11.5%, très vivante et fruitée dans les tons d’agrumes, mais aussi des herbes allant entre la sauge, le romarin pour une levure champenoise mais gardant ce profile belge. Le tout est sec, bien pétillant avec une note épicée agréable.

Cerveja espetacularmente absurda! Um verdadeiro "Champagne", dito pelas uniformes bolhas que sobem na bebida amarela-ouro com espuma branca e ultra consistente, dissipando como num vinho branco. Parece que tudo é (e é mesmo) minuciosamente calculado na fabricação dessa cerveja, desde o tempo e local de maturação até o ângulo de rolamento.
Um aroma carnoso e sabor seco fortemente alcoolico e ao mesmo tempo bem leve nas leveduras. Muito complexo e paradoxal!
Certamente uma cerveja patrão, de respeito, que reles mortais como nós deveriamos ajoelhar perante algo que não tem o nome de Deus só por coincidência.

2010 bottle. pours yellow with an enormous white head. Nose is spicey, pumpkin and cloves and corriander. The taste is sweet, with a nice bitter tinge close to the end and finished out bittersweet. Mouthfeel is fizzy and crisp as I would expect a Brut to be. Solid beer.

Bottle thanks to brother for New Years Eve. Pours a crystal straw yellow with nice, soapy, fizzy white head. Aroma is yeasty, citrus and floral. Flavor seemed a bit dumbed down from the aroma, some sweetness with hints of farmhouse and nice alcohol spice. Light-medium body with high fizzy carbonation. Overall, was tasty but didn’t match the aroma very well.

Comes very close to champahgne in appearance: a little less pale, but with a beautiful bubbly white heads and lots of lively small bubbles in the glass. Aroma is very Belgian, loads of yeasty notes - esters, barnyard, citrus, spices, toasted malt. Taste is (much too) sweet and flowery soapy leading to semi-dry light bitter finish. After a while the carbonation flattens out and as the temperatue in the glass goes up, the taste goes further down and the beer becomes like a mild trippel or a flat watery Saison. I’d much prefer a real crisp Champagne Brut or a "real" trippel...

We served this as our champagne replacement, instead of our usual Geuze. Served at 2 Celcius in champagne flutes, visually it comes very close to champagne. In the nose too, strong champagne hints but with an add maltiness. When the beer gets warmer more herbs come through - sage, rosemary and also a little butter.
Mouth feel is luxurious, a lot of carbonation in tiny bubbles. Flavour is dry, full and alcohol warming. For my taste a little acidity would have made it better. The beer tastes best at very low temperatures.
Very nice experience and a great way to start 2012.
