Golden colored, crisp, high alcohol Belgian-style ale. Simple ingredients lead to a very complex beer in this case. Northwest two-row malt is mashed without the addition of specialty malts for a light, golden color. The wort is lightly hopped in the kettle for minimum bitterness and imported Saaz hops give the beer a subtle, noble hop flavor and aroma.

Thanks to KenB for this, a fine exampke of this style. The pour is turbid jack-o-lantern orange with 1-finger off-white head. Aroma of bready malt, orange marmalade, spicy florals, candi sugar, and some caramel and funk. The flavor is citrusy, very floral, on the dry side, with a lot of spicy fruity funk, and a candi sugar finish. Can a tripel made in Centralia be as good as a fine Belgian tripel? You bet your ass it can, and this one should be winning awards, if it hasn’t already. If you dislike this one, then you’re a dick (the type of dick that doesn’t brew this beer).

Bottle... NTB Ernesto Festo ’06... Murky golden ale with a small, frothy, white head. Good, creamy retention. The aroma is yeasty and fruity with notes of bread dough, mandarin orange and light clove. Sweet, fruity, mildly phenolic flavor. Hopped just enough to keep the sugars from becoming cloying. Full-bodied with a slick mouthfeel and lively carbonation. Finishes fruity and sweet. Kenb sent me this great bottle of beer!

Pours a hazy dark golden with a thin wispy white head. Sweet, authentic Belgian malty aroma has a good bready yeasty complexity and mild coriander spice with light fruity esters. Body starts with sweet crystal and biscuity malts with lots of bready yeasty flavor and good balance. A nice, enjoyable and fairly authentic Belgian tripel.
