COMMERCIAL DESCRIPTION
Intensely fruity and complex Belgian-stlye ale. This special beer is brewing art from start to finish. A full mash tun of malted barley is required to reach the high gravity required for this style, along with a high percentage of a special classic Belgian-style malt. Noble hops are added sparingly to the kettle. During the long boil special kettle sugars are added in the Belgian tradition which lend unique flavors in the fermenter. A classic Belgian yeast strain is pitched and the long fermentation is monitored closely as the flavors develop. The beer is then chilled and aged before being kegged and bottled.

12-oz. Pours crystal clear ruddy medium amber with a thick, sudsy tan head. Plenty of webby lace. Big green apple and sweet wet hay nose, maybe a tiny bit of lemon in there as well. Bubble gum and candi too. Medium, very slightly oily body. Soft carb. The green apples and wet hay return in rather more subdued form on the mid-palate, joined by toast and biscuit. The bubble gum and candi are there too but definitely even more subdued. Sticky, brown sugary finish. Great effort, really interesting stuff, but not subtle or distinct enough yet to have much to say. Maybe aged this would go somewhere. That’s an idea to file for the next trip to the beer store.

Hazy amber, frothy beige head. Aroma of dark fruit, dough, malt. Taste is sweet dark fruit and Belgian yeast. Pretty good beer. Alcohol was not overwhelming.

Pours mahogany with almost no head. Intensely fruity, plum, raisin, fig. Very sweet, sugary. Plum and pineapple flavors. Very crisp and drinkable. Great, great beer.

This ale poured a cloudy dark gold with a thin white head. The aroma was nice and bready as it should be. Silky thick mouth feel, The flavor was sweet and a bit cloying. Overall, a well done Belgian.

UPDATED: SEP 2, 2011 Pours a clear brown color with moderately light carbonation and medium head. Initial taste is lots of plum, and a touch of fig and raisin, maybe a little clove. Fairly complex, interesting, and a beer that I enjoy through the entire bottle. Finishes with a nice tanginess on the back of the tongue that I like about Belgian ales. Warm alcohol is noticeable, but nice. This is cellar worthy for sure. I think it could become quite interesting over time.

Clear amber pour. Sweet malty aroma,toffee, golden raisins, and nail polish. Flavor is sweet, quite sweet actually. Some alcohol is noticeable and acetone. Not sure about this one.

Bottle, about 1 year old. Soft mellow malt aroma with honey, stewed peaches and apples, alcohol, and a touch of miso and meat pie! Deep amber color with lace. Big fruit flavor, stewed, with peaches, ginger, orange, alcohol. Like fruit stewed in brandy. Nicely rounded complexity. Tasty though a bit too sweet and boozy.

Clear medium amber orange colour with a small to average, frothy, fair lacing, mostly diminishing, off-white head. Aroma is moderate to heavy malty, caramel, sweet malt, light alcohol, moderate yeasty, yeast caramel. Flavour is moderate to light light heavy sweet and bitter with a long duration, alcohol, yeast, fruit - candy yeast. Body is medium, texture is oily, carbonation is soft, finish feel is light alcoholic. [20110622]

Bottle at Papsø. Hazy orange red coloured with a small off-white ehad. Fruity aroma of caramel and spices with notes of yeast. Sweet and fruity flavour of caramel and spices with notes of yeast. Sweet and spicy finish.
