This beer style was created in the late 1990’s by some breweries on the west coast of the United States, and most notably by Rogue. It’s an extreme version of the American IPA. It’s a beer with strong amber hues and dominating hop flavours and tastes. It is however well balanced through the presence of a combination of malts. This beer is usually dry hopped, a tradition that is adhered to by Dieu du Ciel!. The bouquet of the beer consists of floral hops. In the mouth, the bitterness is quite strong, without being extreme, and the alcohol makes its presence known, without being domineering. The aftertaste is dry and less syrupy than a barley wine. Thus, it is a very complex and bitter beer, but always well balanced.

Au pif la chaman dégage un parfum d’agrumes, de sucre & d’alcool. Au gout c’est un beau mélange d’annanas, de citron, d’orange & de caramel. L’aventure se termine avec une bonne amertume... légèrement résineuse. OutfuckingBon. ;)

Hazy golden. Intensely grapefruity. Sweet and very hoppy with lots of grapefruit and rich, soft mouthfeel, Very bitter finish. Interesting with a DIPA with a focus on mouthfeel.

A dark ruby beer with a good beige head with medium retention. Smells of hops, flowers, very floral. her taste is very floral, hoppish, with a shy bitterness, actually it is like drinking some flower. A good mouthfeel but the floral part down points in term of drinkability.

UPDATED: OCT 17, 2007 9mo aged cask at the brewpub, DDC 9th anniversary. Golden amber colour. Extremely flavourful. Very hoppy, but surprisingly smooth. Quite bitter, as it should be. The finish isn’t nearly as bitter as I expected. If the chalkboard hadn’t listed this as 8.5% I would never have noticed. Quite possibly the best beer I’ve ever tasted. Also had the 2yr bottled version, but it wasn’t quite as good - a bit too mellow for my tastes.

Bottle from LCBO, Toronto. Pours clear orangey-yellow, off-white head. Fades. Nose: honey, mild booziness, dried apricot and orange. Taste follows these scents. Very well balanced and pleasant carbonation. Some toffee stickiness and resinous finish. Quite drinkable for its 9% ABV.

341ml bottle (dated May 2012) served around 10 degrees in a snifter: Pours a fairly dense and clear golden robe forming about a finger of white foam. It skrinks to a porous layer and leaves a fair amount of spotted lacing. The nose is agressive with citrus, pineapple, vanilla and honey and alcohol. I did get a grassy/floral element from the hops which balanced out the sweets but I had this brew in late June so it probably still had all of its properties. I did read other reviews where older bottles seemed to have faded most of their citrus elements so make sure you enjoy it fresh. The flavours are pretty sweet delivering notes of brown sugar, caramel and vanilla with much hoppy bitterness kicking it way back for a moderate finish. This brew feels somewhat dense and has good corpus and you do get a certain sharpness. The alcohol is present but not overwhelming which is always a nice feature when dealing with complex beers.

Bottle from Cool Wine Hobart 300115. Great looking beer and greet atom and flavour. All round this beer ticks all the boxes and leaves a long lingering aftertaste in the mouth.
