COMMERCIAL DESCRIPTION
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

Refrigerated bottle obtained through trade with pushkinwow poured into a trappist glass. Pours translucent yellow with finger of bright white head that has great staying power. Some lacing, medium body, well carbonated, and yeasty aroma. Taste is complex yeasty citrus and finishes dry.

(341ml bottle from LCBO, aged 1 year) Poured into a Duvel tulip, dark gold in colour with a pillowy 1.5 inch head which left some ’Belgian’ lacing. Aromas could have been stronger, a little bit of spice, some citrus, dry yeastiness. Flavour better, pale malt, some honey sweetness is balanced by spice and a drying bitterness from the hops so it is not cloying. Fairly full-bodied and smooth in the mouth, carbonation soft and fairly Belgian in character. As I remember, better without ageing so I will have to try it fresh again, but still quite enjoyable.

aroma: floral, alcohol, sweets appearance: a great clear and tasty amber/golden color. A very nice solide rocky head taste: A medium sweetness taste at first , very bitter at the end. palate: creamy in mouth soft carbonation not far from british brewery tradition. I think that beer coul be better if bitterness would not hide the other flavors in the end of mouth.

Beautiful yellow gold in hue, with yeasty esters floating inside. A nice subtle aroma of floral & herbs. Sweet start with a light sour finish. Wonderful beer for all seasons.

Single bottle purchased from Zyn Liqour in Calgary, AB on 11/06/2011. Things started badly here....I opened the bottle (which had been lying dormant for several weeks) and beer exploded everywhere, at least half the bottle. Colour: Clouded dark yellow with MONSTER head. Nose: Strong champagne here...maybe something from the Vallée de la Marne region. Flowers bloom ripe and there is also some watermelon. Very fragnant nose. Taste: Medium-light sweet, medium-light bitter, medium-light sour. Mostly flowery and soft, despite the elevated abv %. Not as citrusy as I expected. Pleasent.

Bottle from Mane Liquor. Pours a wonderful golden orange with a very small white head. A touch of lacing. Orange peel and spicey floral notes make up the bulk of the aroma. Orange peel is very prominent in the taste. Mild spices with floral notes and dry biscuit. Medium to high carbonation with slight floral hop bitterness to finish. Nice beer

A delightful little beer! Pours a cloudy, orange tinged gold with nice, slightly off white head. Nose is spicy and yeasty. Flavor really sees the spicy and floral notes come out, with a nice amount of hoppy bitterness to balance it out. A little sweet and floral as it hits the palate, fades in a long, bitter floral finish. Just very tasty and interesting to drink.
