Commercial Description:
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

12 oz. bottle. Pours hazy golden straw color with a huge fluffy lasting white head. Lacing was thick and chunky. The aroma is an inviting mix of fruits, peppery spice, pale malt, and light floral hops and grass. The flavor begins on a silky smooth note with lemon zest, yeast, pale malt, and fruit. Mid palate the peppery spice kicks in leading to a slightly hoppy (floral) drier somewhat bitter finish. Medium bodied and for the most part smooth. There is a slight spice burn in the middle. Very interesting and enjoyable.

Bottled. Poured medium golden with a fluffy, well-retained cap of white head.. looked great in the glass! The aroma picked up lots of white peppery yeast, cloves, and mild star fruit over a pale malt base.. tangy and engaging. The flavor had pale malts and some light fruit on the drier core with all of the aforementioned spices abundant around it.. bitterness was present in the form of cat pee and floral notes.. finished spicy and bitter. Medium-bodied with higher carbonation on the palate.. spices worked very well and kept it interesting throughout. Great brew!

Bottle. Pours a very nice lemony yellow with an aroma of zesty spring spices and light pepper. Nice white head. Flavor is buttery coriander with hints of lemon peel. Nice mouthfeel. Definite repeat.

Pours a hazy golden color with a big, foamy white head that shows great retention. As it finally settles patchny lacing circles the glass. The aroma shows notes of spicy floral hops, citrus, dry wheat, and some toasted bready malt. The flavor is equally nice with orange peel and lemon blending nicely while the floral hops dry things out and add their natural bitterness. This is hoppier than I thought it would be, but that is a good thing. Medium bodied mouthfeel and very well carbonated that is very easy to drink. Nice, dry, and refreshing finish. Really nicely done here. Another solid brew from this brewery.

0.34l - Good take on a tripel. Metallic distraction midsip really brought hte maerks down.

Hazy yellow gold under a lasting white head and a sticky, stringy lace. Fruity, floral aroma, hints of honey, lemon, and a faint peppery spice. Medium body and effervescence, dry palate.A lot going on in the flavor with a light malty sweetness, some acidity, some sourness in the background, and a spicy bitterness to finish it off. Very nice, lots of flavor and aroma.

Bottle. Some floral notes but also some yeasty bread. Yellow body with white head and some crud floating around in the glass. Some fruits but mainly the yeasty bread flavor light spice added. Is rather smooth on palate but the drynesss lingers makes you yearning for either water or a refreshing brew to cleanse the palate.

Bottle. Huge very fizzy white head with poor retention, very nice lacing, lively, fast rising carbonation, hazy, and a yellow hue. The aroma was very nice-malty, yeasty, hoppy, floral, fruity, and spicy. The flavor was sweet, malty, hoppy, spicy, fruity, and a short dry finish. The mouthfeel was mostly smooth and slightly tingly and medium bodied. A nicely balance beer, easy to drink, refreshing on a warm Indiana summer day, worth a try, would definitely drink this again. More please!
