Commercial Description:
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

This is how it’s done! Honey colored with a huge white head. Light peach, fresh cut flowers, and a touch of pine in the aroma. The flavor is light, sweet, and a bit fruity at the start before coming on strong at the end with a notable hop bite. Easy to drink, subtle, and still complex.

Bottle. Pours with a largish, rocky, white head that leaves great, very strong lacing. Body is a murky yellow. Aroma of oranges, fruits, dryness, candi sugar, and honey. Taste is a bit bland, dry and spicy with a bit of hops. Very lively carbonated with a dry mouthfeel.

Pours a hazy honey yellow with thick white head. Aroma is floral with undertones of piney hops. Flavor is VERY floral with hops presence. Subtle floral notes such as lavender and rose. Light sugars but the sugars are covered by hops. Body is creamy with high carbonation.

A dry, herbal Belgian ale. Wild grass, light malt, citrus, and wheat flavors. Fairly complex. Moderate hops in there as well. This is really for a style that rarely produces exciting beers.

At Cafe Volo, Toronto, August 2008. Pours a hazy golden colour with a large, wonderfully aromatic head: full of citrus, orange, pear, honey, grassiness, yeast. Tastes spicy with some citrus, grass, apple, orange, a great, pleasant sourness. Mouthfeel is medium. Dry, slightly bitter hop finish.

Gold with a thick white head. Aroma is a light spice with yeast and citrus, light hoppiness, nice easy maltiness. Taste is initially, citrus, light alcohol, and spice. Pretty nice easy drinking belgian style ale.

Bottle. Pours gold with a big white head and lacing. Aroma of typical belgian gold, with yeast, light fruit, and spice. Taste is also of fruit, spice, and yeast. Finish is dry, almost champaign like, and bitter. Mouth is light and easy-drinking. Not a bad drinker.

(Bottle). Fruity and earthy aroma. Very cloudy orange-amber color, with large off-white head. Flavor is apricot, pear, tangy, and spicy, quite unique. Rather strange finish. Interesting.
