Commercial Description:
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

12 oz. bottle. Light gold color with a huge, fluffy white head. A good bit of lacing throughout. Nice floral aroma with yeasty hints. Flavor is a bit spicy, with subtle hints of honey and hops. Finish is dry and bitter. Very tasty beer.

Pours a light orange with a frothy off-white head. The aroma is rather faint, with hints of yeast, fruit and pineapple. This beer has a thick body and an explosive flavor, with notes of honey, lemon\citrus, yeast, caramel and some peach. Overall. I thought it was good, but seemed to have a little too much carbination.

Slightly hazed and tawny in color with a tall lingering frothy head. Superb lacing. Aromas of citrus and stonefruit nectar. Medium weight on the palate with excellent carbonation creating an expansion on the palate with a fluffy softness. Dry yet fruity with flavors of citrus and banana gum spice. A strict peachpit bittering component rips through every sip like a sword leaving a bitterness on the tongue. The finish is perfect. This beer is rich yet balanced.

Bottle - Volo. Appearance: Cloudy yellow, large white head, some teeny floaties. Aroma: nice grapefruit & yeast aroma with some black pepper too. Flavour - wow - a very big flavour, alcohol, spice with a dry yet somehow juicy finish! Lovely, very nice.

Pours a cloudy pale gold in color with about an inch or more of pillowy white head. Smell is slight citrus and lemon zest. There is a bit of yeast in there as well. Just noticed some yeasties as I set down my beer as well. There is quite a bit of hops and biting citrus in the taste. Pretty hoppy belgian.

Bottle, Volo. Hazy golden, off-white foam head. Citrusy, soft, sublime aroma. Crushing complexity. Citrus pith bliss. Sensual smoothness. The best of all worlds in this brew! 9-4-9-4-17

Bottle at home. Totally cloudy golden with bone-colored head. Sweet malt with nice bright hops, some vanilla, and leafy herbs and jasmine. High but soft carbonation. Nice and herbal with a great grassy and leafy character. More like a saison but nice for whatever it may be. Is a subtle beer, and I like it. 7-3-8-3-14

This is pretty well carbonated as a regular pour into my 25cl tulip glass produces a four finger thick, pale, off-white colored head. The head is quite fluffy and creates ample lacing and a nice rocky surface as it slowly recedes. The beer is an amber tinged gold color, but shows a lightly hazy, orange-gold hue when held up to the light. The aroma, noticeable as I visually inspect this beer, smells of grassy hops. A closer inspection yields aromas of orange zest, ginger, piquant white pepper and an herbal grassy note. As I begin to notice the hops a bit more some aromas of tropical fruit (lychee, apricot) become more noticeable and compete equally with the herbal and grassy notes. Towards the finish grassy grain notes, dusty crushed pale malt aromas and some crushed cracker notes become noticeable. I really like the combination of vibrant hop aromatics and spicy yeast character and this beer definitely achieves that nicely.

Lightly sweet grain character mixes with the hops to produce some aromatic honey-like flavors. The hop character at first contributes flavors of lychee, apricot and orange zest, but then towards the middle and into the finish picks up some herbal notes of lemon verbena, pine and a light, green grassy note, all the while retaining a lingering hop fruitiness. The bitterness, for all of the hop character is fairly light; in fact there is more astringent, fresh green hop character in the finish than there is clean, biting bitterness. This has a certain heft to it that is lightly viscous and of a light medium body; this still manages to be quite a bit more quaffable than the body might suggest (perhaps the hop character makes this more drinkable). Fermentation character, while secondary to the hop character, still plays a significant role with flavors of clove, musty crushed pale malt, piquant-slightly-woody pepper, young ginger (accented by the hops) and some sharp phenolics that are more than clove but not quite into the cured plastic category.

My second pour sees an increase in a clean bitterness that is quite ample and seems accentuated by the zippy carbonation. This is quite a tasty beer and I am really wishing this was a 750ml bottle that I was enjoying. I definitely wish I had more of this beer as I am definitely a sucker for beers like this.

bottle taken from le depanneur de la rive. Dark golden color with pretty large white head. pretty hoppy and overall a really nice ale.
