Commercial Description:
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

nice beer, bottle Cafe Volo. cloudy orange color, with little chunks at the bottom, nose was hopy but also , slightly soapy, with some nice belgian spices, flowers as well.flavor is yeasty but sweet, but well balanced peaches , and honey. some hops on the finish and a great Belgian ale is what we have, probably one of the best Belgian style ales in North America

Bottle. Sweet aroma of malt, wheat and sugar. Cloudy golden colour with a frothy, lively white head. Thick syrupy texture at first. Bitter, tangy with a little spice. Hint of floral notes. Bitter finish. Quality ale and very tasty.

Bottle from The Keg Liquors. Nice suprise from what is quickly becoming one of my favorite breweries. Pour a cloudy orangey blonde. Aroma jumps out of the glass, presumably from the dry-hopping. Very lively palate (bottle conditioned?). Nice wild spice. Gorgeous fluffy head that lingers...and lingers...and lingers. Great beer.

Pours a bright, hazy yellow orange with a rocky white head that shows very good retention and sporadic lacing. The aroma starts much like a typical Belgian pale with yeast and sweet fruits, but there is a big pepper presence that stings the nostrils a bit. The taste has an even bigger peppery spice presence on top of the fruity hops up front and the yeast in the background. There is also a bit of bananas in the taste as well. The mouthfeel is pretty dry and peppery for the style with a bit less sweetness than I would expect. This is another unique offering from Dieu Du Ciel and one that has a strong spice presence to mix it up a bit. Very good.

12 oz bottle. Poured hazy yellow in color wtih a large white head that left nice lacing on the glass. Aroma of citrus, spices, and some esters. Tastes of fruity esters, bananas, citrus fruits, bread, pepper and other spices. This one was quite refreshing and nice. I enjoyed the hop character.

Soft, fluffy white head with good lacing. Cloudy gold color. Smells of citrus hops and plastic. Flavor is spicy Belgian yeast and bread plus banana and cloves like a wheat beer. Nice hoppiness too. A well-balanced, enjoyable beer. Very drinkable.

Bottle from Coopers. cloudy yellow pour with a big fluffy white head. Aroma is of sppices and some banana. Taste has some nice sweet malt with some lemon and frut hanging around. Very good.
