Commercial Description:
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

[1416-20080530] Tap. Mild Palmolive dish soap aroma has a bit of fruitiness and later is a bit of cooked egg. Hazy, light orange yellow body with a medium-lasting creamy white head and thick lacing. Booooozy medium yeast flavour has some citrus wheat. Medium body. Good.

Bottle from secret Santa (sprinkle). Pours a hazy yellow color with a huge clumpy white head. The aroma is spicy and soapy with some banana bread. The flavor is well balanced with a host of complex tastes coming together nicely; I get citrus, grassy hops, biscuit, white pepper, pear and walnuts. The mouthfeel is malty and quite satisfying. The finish is long with lingering peaches and pears. Overall: I am really quite surprised by this elegant concoction. Highly Recommended. Thanks again mike.

Slightly haze with a light golden color. Very aromatic - floral and spicy (peppery!). Some sweetness and fruit as well. Very bitter dry flavor with lots of spice and some malt. Earthy and fruity. Crisp and refreshing. Reminds me of a nice wheaty summer beer, but a bit heavier and spicier.

11.5oz bottle. Pours deep yellow gold - cloudy with a medium-sized, fluffy, white head that quickly dissipates into a very thin, spotted, persistent ring of foam. The aroma is very Belgian: grassy hops, bready/doughy malt aroma, sweet and fruity esters, some bitter citrus elements (lemon zest, grapefruit rind), and some spiciness (pepper and coriander). The flavor starts very dry with a nice, big hop flavor and bitterness combined with subtle citrus - and an almost tartness. The beer remains dry and complexly bitter and earthy throughout. There is a subtle fruit ester note at mid-palate and some dry, toasted bread notes - but the malts are a bit subdued and there is almost no residual sweetness. Mid-tongue is bitter with earthy hops and an interesting but somewhat mild yeastiness - doughy and spicy. The finish is very dry and gives a subtle nod to a dry champagne. Another nod to champagne is the elegant and vigorous level of carbonation. The mouthfeel is very crisp with bubbles and the body is light (though swirling it in the mouth to release the CO2 reveals a slightly thicker and more slippery texture that is medium in body). Though the beer is very dry with a firm bitterness, the aftertaste reveals a nice graininess that tastes like pale malts with an ever-so-slight sweetness. Overall, a very interesting beer that is well constructed and very well suited for the warm weather.

Pours a nice yellowish gold with big lasting soapy white head. Smell is lemon, some peppery spice and belgian yeast. Taste starts hoppy, lightly bittered, and clean with orange peel and lemon, and then finishes a bit yeasty and musty. The hops give a nice citrusy quality that brightens the belgian yeasty flavor I’m not typically crazy about, and makes this a pretty solid beer for me. Nice and crisp and lively mouthfeel. Very drinkable.

Slightly cloudy golden pour with orange tint. Mild creamy white head. Nice citrus, yeast, bread, tartness of summer fruits. Spice present but well used. A very crisp beer. Lovely.

11.5 oz bottle from Kingdom Liquors (Tampa, FL). Pours a hazy caramel golden color with a massive white, foamy head and clearly visible floaties. Excellent retention and lacing. Aroma is spicy, orange peel, ripe citrus, grain, bready yeast as well. Flavor is malty sweetness, spice, pineapple, banana with slight hoppy notes toward the end. Medium body with a slight bitter finish. Nice Belgian-style ale.
