Commercial Description:
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

Pours a hazy, coppery, golden color with a full, white, creamy, and rocky; longevity of the head is good and settles to a very small, rocky layer leaving random lace. Nose is simple but pleasant; notes of honey, doughy yeast, spicy notes of white pepper (maybe from the dry-hooping), lemongrass, and coriander. Flavor is certainly dry-hopped but not overdone; spicy notes of white pepper, coriander, lemongrass, orange zest, malty notes of honey and toasted grains, light doughy yeast and hints at cloves. Palate is soft to lively, medium, creamy, and lightly dry. Finishes fairly lengthy with the moderately bitter notes remaining throughout leaving only some citrus notes, grass, clove, and pepper in the end. A nice, fairly easy-drinking light Belgian; it is well put together but there is nothing exceptional about it.

Solid Belgian. Nice palate with light carbonation. Yellow color and a bit o’ head. Banana with some spices, perhaps clover. Slightly bitter finish. (on tap at Dieu du Ciel, Montreal)

This Belgian Ale pours a deep yellow gold color from a 33cl bottle. Very large sized creamy white head, with excellent staying power and lacing. The aroma is fruity and sweet, with some yeast and hops. A medium bodied Belgian Ale. The malts are fruity and sweet, with some yeast and spice. The hops are piney and citrusy. Nice balance. The beer starts out fruity and sweet and finishes dry and hoppy. There are some Belgian yeast and breadiness in the middle. Mouthfeel is full and round. Finish is clean and dry. Aftertaste is slightly sweet with a touch of hop bitterness.

Bottle from Belmont Station--Poured a hazy golden body, slightly orange, with a fluffy thick white head. Sweet, yeasty, hoppy nose. Citrus and floral with tart and malty undertones. Somewhat amazing. I really, really enjoyed sipping on this beer. I wish I had more now.

It poured a slightly hazed golden body, tinged with orange and capped by a large, pillowy head that laced the glass heavily. The aroma is quite floral, yeasty, with plenty of citrus fruit beneath it all. The malty sweetness provides a good balancing factor in a flavor sominated by a citric tartness and and floral bitterness that grows as the drinking goes on. The finish is dry and mildly bitter. Quite nice.

cloudy dark gold with a large white foamy head. apricot, flowers, spices, pepper, apple aroma. flavor is peach, apricot, rose hips, hops, pepper, herbs. nice and floral. very impressed with this brewery.

5/22/08. 12 oz bottle thanks to drewbeerme. Pours a hazed orange color with a tall fluffy white head. The nose has a creamy doughy yeastiness to it with lemons and florals. Sweet and slightly creamy flavors. Citrus, grass, with a touch of spice. The finish is rather drying but tasty.

This was cloudy golden in color with a thick fluffy white head. Aromas are of florals, spice, herbs, citrus and yeast. In the mouth it is medium-bodied with a concentrated and crisp, yet rich, midpalate that fades to some dry bitterness on the finish.
