Commercial Description:
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

Great beer. Bottle. Poured into Chimay goblet. Pours a beautful gold with nice frothy head. Spicy aroma full of coriander, herbal, floral, lavender?, hops. Taste is almost medicinal, herbal, peppery then hoppy. Finishes off with a nice sweet malt finish. Nice full creamy mouthfeel. Great beer. Shelton Brothers get this beer out there

Bottle. Pours a slightly hazy golden with a thick long lasting white head that leaves great lacing. Aroma of spicy yeast, cloves, coriander, citrus, and floral hops. Taste is the same as aroma and finishes slightly grassy. Medium mouthfeel with a mild amount of bitterness and a dry crisp spicy finish. Very good.

Pours a beautiful hazy peach-gold with a thick head that looks like beaten egg-whites. Aroma is full of promise - cloves, coriander, banana... yum. Oh god, Belgian blondes would ALL be immensely better if dry-hopped. This is totally the way to go! Wonderful crisp hop taste opens up into delicious malty sweetness perfectly balanced by lingering bitter hops, not grassy at all but lightly grapefruit-like. Notes of canned peaches. Alcohol warms the finish. Great creamy body, if a bit under-carbonated, but really quite nice. What a super treat - thanks to Robinvboyer for the trade!!!

Bottle from robinvboyer. Poured a fairly clear and light orange with a powerful and huge white head. The aroma is spices, apple, and some citrus. The flavor is dominated by a zesty and spicy sweet malt, with tons of spices and a nice somewhat bitter hop finish. A very nice Belgian Ale. Less yeasty and more hoppy than most. I could drink a ton of this.

11.5oz bottle. Poured a deeper and cloudy yellow color with huge sized (5 finger) white head. Aromas of bananas, spices (lots of pepper), and yeast. Tastes of spices (lots of pepper again), fruity, some citrus, and yeast. Some lacing left on the glass.

Bottle from trip to Montreal. Slightly hazy golden with a large white head that leaves some beautiful lacing. Aroma is fantastic, big and fruity (esp. apricot), some sweet and spicy notes, good yeast character, and floral & tea-like hop notes. Full mouthfeel, a bit creamy. Flavour starts like a typical solid Belgian golden ale - yeast, fruit, a but of spice - but then the hops kick in and take it to the next level with lingering notes of orange zest. Excellent stuff!

12 oz bottle. Pours a hazy golden with orange notes and a larger foamy/bubbly white head that left sticky lacing. Aroma of of pepper, lemon, orange peel, Belgian yeast, spicy, candi sugar, floral, fruity, and a nice hop touch. Flavor was more of the up front black pepper, Belgian yeast spiciness, some tropical fruits, orange, bready, candi sugar, nice and dry. Well done.

Pours a slightly hazy yellow gold with a frosty medium sized white head. Nice lacing. Aroma of black pepper, zesty orange, yeast and sugar spice. Taste is peppery with hints of of light candied sugar, zesty orange and yeast. Nice.
