Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

Slightly hazy golden-orange color with nice frothy white head. Citrus, banana, and clove notes. Belgian yeast too. Taste is bitter hops with strong Belgian yeast. Nice balance with the fruity flavours (orange, citrus, grapefruit, passion fruit). Great bitter aftertaste. High carbonation. Excellent beer!

Misty orange body and stable large head. Fresh fruity hops, peach, red apple, rosemary and Belgian yeast . Good yet straight taste, light bitter and light sweet. Very well brewed, flawless. (Bottle from Saveur Bière)

Smells fruity, Peachy smell and slightly sweet. Pours golden, cloudy with lots of sediment. White head. Tastes like a hoppy saison. Funky, slightly sweet, peppery, coriander, citrus. Very pleasant. Medium body, nicely moderately carbonated, nice finish. Very tasty brew, doesn't look as good as it could, especially with dark looking sediment. flavour and mouthfeel is great.

2014 bottle to a tulip glass. Pours a hazy golden straw color with a fluffy white head. Aroma is hay and damp soil with lemon and a hint of herbal spice. Taste is the same as the nose with the earthiness being more pronounced and a slight sweetness in the middle. A little white pepper at the end with a grassy and floral bitterness. Has a medium soft mouthfeel with a little astringency at the end. ---Rated via Beer Buddy for iPhone

Pours a hazy light golden with a nice off white head that settles to a film and leaves great lacing. Aroma has Belgian yeast fruitiness with biscuit malt and mild grassy hops. Taste provides the same yeast fruitiness with some citrus, the biscuit malt, some earthy clove spiciness and a slight hint of pepper. Finishes dry with a grassy hop flavored bitterness. Mouthfeel is semi creamy with a light/medium body and moderate carbonation. Really nice Belgian IPA with well integrated flavors and a smooth taste. I’m finding that Belgian IPAs are a style that I really enjoy with the spicy/earthy and fruity qualities that the right combinations of hops and the Belgian yeast provide.

Pours hazy gold with a thin white head. Continuously streams bubbles like champagne. Aroma of grass, citrus and yeast. Tastes of lemon, grass and spice.

Really flowery aroma, nice, but the flavors are a bit on the bitter side and the finish feels a tad astringent. Not a bad example of the style but not as drinkable as I’d like.

First look... I thought it looks amazing, cloudy dark yellow beer, with stable pale yellow head, and lovely mandarin, orange, oak and honey aromas. However a felt a little disappointed when I tasted and the only I could taste was the roughness of the alcoholic flavor. Sadly the hops and malt flavors are not strong enough to create a good balance. Even though I consider it a good attempt for a complex design (IPA / Belgian ale)

Pours golden color with a large white head. Aroma is sweet with toffee and yeast, subtle hop notes, some honey, hay and lemon. Flavor is spicy and citric, some yeast and toffee also. Strong carbonation, lingering lemony finish. Nice, refreshing brew.

341 ml bottle. Pours a hazy golden colour with a white head. Aroma of apricot, floral notes and some grains. Flavour of grains, some wort, apricot, mild bitterness, mild cardboardy notes and some astrigent. Medium bodied and harsh carbonation. Finishes grainy, dry and bitter. Very Belgian, not very fresh and not my thing.
